Kristin Hammock started making cheese around 2010. Her first cheeses were done using milk from the store, but she soon realized that her cheeses would only be as good as the milk she used. She began buying fresh milk from local farms and around 2013 decided that she should just buy goats.

That lead to her love for lamancha dairy goats. Never one to do things halfway, Kristin quickly increased the size of the herd and began breeding for the best quality animals she could achieve. Hammock Haven has brought top quality genetics in from around the US and breeds for production, conformation, and temperament. Hammock Haven goats are registered with the American Dairy Goat Association (ADGA). Kristin and family participate in all ADGA performance programs including linear appraisals, dairy herd improvement, and goat showing.

Kristin entered the Amateur Cheese Competition at the ADGA National Convention in 2017 where she won first place with an aged jack-type cheese.

    Hi there, I love your cheesemaking videos! I was wondering how this Colby turned out using 3 tsp rennet/8 gallons milk. Even though you reduced the amount of rennet from the original recipe, it still seems like a lot to me. But if your Colby turned out tasty, I'll do it!!!! 😀

    Hi, Kristen hasn't been active on here for some years, sadly. You order the ingedients from a cheesemaking supplies online store. Kristen used these : Rennet, liquid animal Lipase powder Calcium chloride solution Citric acid powder (or 1 Tbsp vinegar) Kosher salt (has no additives or iodine).

    Just keep your yogurt longer in fridge. I used real whole milk whole fat yogurt to inoculate your batch but keep some from your own when you make it to start new batches once you make your own Greek yogurt You can also use just regular pot. Don't need instant pots

    Duck eggs swampy taste? They are delicious and more nutricious then chicken eggs. In my opinion duck eggs are watching better tasting than chicken eggs. Way more rich and delicious. It's like comparing whole rich milk to 1 percent. Got 4 khaki Campbells and 3 Indian runners. It's egg heaven here. Take care.

    On our Rocky Mtn Homestead, we feed our Goats alfalfa cubes for cattle during the winter...They get looking skinny like your goats...During the non-snowy weather, they get supplemented with alfalfa cubes but they mostly forage in the forest and get big and buff...big strong muscles. We use no grain,/hay at all, since that would not be their natural diet. We have found that foraging works the best for our goats and will continue to use this method with them... I truly don't see how you can afford to feed your goats all of what you do... I know we couldn't keep up that program, but I am happy that some people can... Foraging is the method we can afford and they are healthiest on this diet... BTW - Baking Soda is highly alkalizing... it will make it so whatever consumes it will not have enough stomach acid to digest their food properly...It also causes diarrhea...If you put some baking soda in some water and drink it, and then test your urine's PH, you will see that it makes it highly alkaline...My late husband was a paramedic as well as a Fire Chief, and he said it is a lot easier to bring a person out of acidosis than too much alkalinity in the body...be careful with baking soda.

    Please answer me. I’m making cream cheese plenty times. Everything correct( temperature, culture, animal rennet) why is my cream cheese on a taste like a grainy, not smooth like store bought.

    I don’t know if you would even get this message/question, but it would really be helpful to me. When making Paneer cheese and using Kiefer as the curd maker, wouldn’t you wait till the milk has cooled enough so it won’t kill the organisms in the Kiefer before adding it? Your thoughts please. The book instruction has Kiefer as an option instead of lemon juice or vinegar. So I thought why would I want to kill all the bacteria in my Kiefer? I hope this could be answered. Thank you so much.     I don’t have pasture for my 2 Nigerian Dwarf does. One is due soon and both will be milk goats in time. We have only had them 6 weeks. I give them a mix in the morning of alfalfa pellets, organic goat feed those two are half the feed they get then I add in BOS, kelp, field peas (not their favorite), whole oats and barley. In the afternoon about 2-3 I give them a varied mix of leaves (cabbage or beet greens or lettuce) usually half a carrot, half an apple, maybe pumpkin and or celery with dried raspberry leaves, some chaste berries and a couple cloves of chopped garlic. I sprinkle on some dried nettles. Sometimes a half banana w/skin. Soaked beet shreds.The same quantity each day. They have free access to baking soda and a mineral buffet, orchard grass and alfalfa hay. They just didn’t like the Coastal Bermuda. I bought some chaff hay but haven’t given it to them. I read it was good for kids. Anyway some say I shouldn’t be feeding the fruit and veggies, it will upset their rumen balance. They look and act super healthy and their coats are super shiny. Poop is normal. Honey the non pregnant doe has finally filled out a bit. She lost weight when we first bought her. She looks good now. She is a small ND anyway and last weight was 49 but bet she is about 53 now. I don’t want to kill them with kindness and they don’t seem to overeat. When full they stop. What do you think?

    Thank your for using the goats milk for this recipe. New to the channel and finding it very helpful. I do want to ask if you are using unpasterized goats milk? I don't have that many goats so I would have to collect for a few days to get this amount of milk will that effect the cheese. How many days would you say would be the max for storage prior to making the cheese?
