I worked with Dave for a year, at The Bear in 2000-2001, when Mark Birchall was GM. Dave was just coming into his own then, but the outstanding thing about him at that time was that he wasn't an aggressive, unpleasant bully as was the fashion, or the norm back then. He was a patient, decent fella who I am sure I didn't afford enough respect too. It was a good year though, I learned loads, (mostly that I was done with the hotel game!) and the moment he said to me late NYE 2000 that he'd close up, is something I am grateful for to this day (it had been a horrible day!). The boy liked a big fat cigar. I look back on that year with great fondness for the food and the people!!
it's so easy to listening what this Chef said. That' s English for a Vietnamese like me to hear. I so regret that not too young and too rich in order to come there to study, althought i like studying Pastry best in my life

Is it necessary to cover with a parchment paper lid, directly on top of the mushrooms? Or can I just cover the pot with a regular metal lid?
No need for the parchment paper if you have good heat control
Mine is better. Screw you guys. Waste of money. I can personally vouche for that. I was never evan taught this in school. They are terrible. Start working and read some books you will be far better off. Work hard and work on focusing on working hard.

I attended Western Culinary Institute in Portland, Oregon before it was bought by Cordon Bleu. None of my classes are transferable to any US college. The ACF accredited programs at Collin College do not recognize class credits from CB. In fact, no Cordon Bleu school is in the USA anymore. Nor are any of their courses are accepted by any US school that I am aware of. Beware of "For Profit" schools.
