If you give your customers freshly made cake then you don't need to use simple syrup to make it moist again. When you order a cake ask if they use simple syrup and if they say yes then the cake is either old or a prebaked frozen cake that they will thaw out for your order. The bakery in the store I work at stores cake in the freezer for up to 90 days. And this isnt just my store, it is actually industry standard 😢
Thanks for your comment! Although, this actually isn't entirely true. The simple syrup does keep cakes moist after they've been in the fridge but this is recommended for ANY bakery who makes cakes because of the fact that 90% of the time you have to bake your cakes in advance especially if you're operating at a high production level. Also, considering the time it would take to bake a cake, fill and frost it, and decorate it in a single day it's RARE that any bakery would offer this type of service. For a single layer sheet cake this wouldn't be an issue but any cake that is layered, would need to go into the freezer for stability when filling, frosting, and crumb coating it. Also, that should be a LAW that bakery shouldn't be able to store cakes in the freezer for 90 days! That's horrible! LOL

Unfortunately, I have had people try to pick my mouth about the way I make my products so that their daughters/relatives can do the same, the end result being that they'd stop buying from me. So yes, sometimes people do steal from you but I guess that's part of life.

I don't know what Universe she is talking about. The one I live in is random, indifferent and often absurd.
I got my very first order :) The customer wanted 36 cupcakes, with 4 different flavors of cupcake, 4 different flavors of frosting and in 4 different colors. I did my best to price out the cost of my ingredients and I got $47 (I used bake diary). I wanted to charge $10 and hour for labor, but these cupcakes are going to took me 8 hours. So, if I do $80 plus $47, that equals out to $127. I haven't even added in all the other things like overhead. I felt like that was too high of a price because I'm brand new. So, I just did $47 multiplied by 30% for labor and overhead, the I added another 20% for profit. The total came out to $73, so I rounded up to $80. Should I be doing a percentage, or should I be calculating by the hour? I feel if I do by the hour, no one is going to pay that much for cupcakes or any other sweet treats.
Never do the percentage! The numbers are the numbers. You can't shortchange yourself or else you're gonna be running a nonprofit organization. Regardless, if you're just starting out if you don't price properly, you're gonna stuck in this hole of incorrect pricing and you're just gonna end up frustrated and burnt out cause you're working a shit ton for little to no profit.

Not if you're baking large production. You'd go through shit ton of those bags.

Buying fabric bags you can reuse them over time therefore spending less money buying disposable ones, and you need large bags so you can cut out time constantly refilling the tiny bags. As a business owner time is money!
