Hallo liebe Yaxin Deine Rezepte erfruen uns immer wieder sehr. Aber ich habe ein großes Problem. Welchen Seiden Tofu verwendest du? Ich bekomme hie nur den von Taifun. Ich bin von diesem Hersteller sehr begeistert, Aber ich kann deine Seidentofu Rezepte nicht nachkochen, weil dieser Seidentofü so extrem weich ist. Er hat die konsitenz von Quark und es ist nicht möglich ihn in Würfel zu schneiden. Was sehr schade ist, weil keines deiner Seidentofu Gerichte damit zu realisieren sind.
Ich kaufe Seidentofu normalerweise im Asialaden (go Asia). Dort gibt es mehrere Marken, die auf der Verpackung angeben, wofür der Tofu am besten geeignet ist, z.B. für Salat oder Suppe. In Berlin gibt es einen Tofuhersteller namens Treiber. Deren Seidentofu oder Naturtofu Extra Weich lässt sich sehr gut schneiden und hat trotzdem eine seidige Textur. Inzwischen liefern sie auch in viele Städte in Deutschland. Bei den Bioläden Alnatura uws. findet man mittlerweile neben Taifun auch andere Seidentofu-Marken. Vielleicht kannst du dort mal schauen und testen. Du hast richtig geschätzt! Die bekannten chinesischen Gerichte "Kung Pao" oder "Gong Bao" stammen tatsächlich aus der Provinz Sichuan im Süden Chinas. Diese Gerichte sind nach Ding Baozhen, einem Beamten der Qing-Dynastie, benannt, der als "Gongbao" respektvoll angesprochen wurde. Der klassische Kung Pao Dish zeichnet sich durch seine scharfe, süße und salzige Sauce aus, die mit Erdnüssen und getrockneten Chilis zubereitet wird. Thanks for the recipe. I'd like to make bao/dumplings with what veggies I have in the kitchen. How do you decide to blanch vs salt veggie? For example, if I only have cabbage instead of bok choy, should I blanch or salt?
Thanks for your message! When using vegetables for dumpling filling, if they have a high water content, they need to be prepared properly. Generally, vegetables that contain a lot of nitrates or oxalates, like spinach and green beans, are better blanched. For others, salting is sufficient. For example, you can simply use salt to remove excess water from cabbage:-).

Ich würde Cassia- wenn möglich durch Ceylonzimt ersetzen. Cassia ist für eine gewisse Giftigkeit, bzw. Risikopotential bekannt. Bundesinstitut für Risikobewertung: „Cassia-Zimt […], der im Vergleich zu Ceylon-Zimt hohe Cumarin-Gehalte aufweist. […] Das BfR ist der Auffassung, dass die Cumarin-Aufnahme durch Lebensmittel weiterhin begrenzt bleiben muss.“ „Verbraucher, die viel Zimt verzehren, [nehmen] relativ hohe Cumarin-Mengen durch Lebensmittel auf.“
Vielen Dank für dein Feedback und die ausführlicheren Informationen über Zimt. Ich habe die Fünf-Gewürze-Mischung, die ich in einem deutschen Supermarkt gekauft habe, überprüft und festgestellt, dass sie Ceylon-Zimt enthält. ;-) Im Video habe ich tatsächlich Cassia-Zimt gezeigt, den ich von meinen Reisen in China mitgebracht habe. Dort ist diese Zimtart üblich. Ihr Geschmack ist intensiver. Obwohl gelegentliche kleine Mengen wahrscheinlich unbedenklich sind, stimme ich deinem Vorschlag zu, dass es sicherer ist, Ceylon-Zimt zu verwenden, um das Risiko einer Überdosierung zu vermeiden.

Additionally, the soaking water from the dried mushrooms can be used in cooking this dish, and dried shiitake is a common pantry staple. For these reasons, I use dehydrated shiitake. However, this dish can also be made with fresh shiitake mushrooms and should still be delicious. You can decide based on your preference and the availability of ingredients.
