in my opinion it's infected or ill animal that just sounded like human because it's in a bag and we can't hear its exact sound (why i think it may be this one? Because there were cases when zoo's k*lled ill animals or used them as food for other), or it's the last zookeeper that has been infected, so to avoid spreading infection or hide the truth from the world (because if he died and everyone knew about it, the body would have to be released for burial, and then what was happening in the zoo would be revealed and the facility could be closed) they chosed to use the infected body as food to hide it (it may have sense in my opinion because we saw in last trailers that after shreding the body some kind of worm comes out of the meat). Maybe that's why in trailers the calling person hides what's going on here.
