Today I take you on an old journey, the old fashioned way of making Waakye Shito. I hope you enjoy this recipe and give it a try.

**Ingredients**
Herrings
2-3 Cups Dry Whole Chillies 🌶️
1-2 Cups Ginger (when chopped)
1 bulb Garlic
5 large Red Onion
Calabash Nutmeg
Aniseed
Rosemary
Cloves
Black pepper
Salt tt
Oil to fry

    It's really good to know how the ORIGINAL Shito was made. Indeed this method is really good as there was no blending and so no water. We have learnt how to cook preserving the nutrients of the veges we use. Looks like the ancient methods were better and healthier than today's methods.

    I am very pleased to see you share this authentic shito recipe...😋😋😋 Chefs and culinary experts around the world have come to a common agreement that, pounding spices, and ingredients, release their natural oils, flavours and aroma, better than blending/food processing... We need to preserve our food culture as Afrikans. Mexicans still pound their ingredients. In fact, this is how Ghana shito was originally made before we started adding tomato paste and all those 'abrostire' crap...Pounding the ingredients also preserves their nutrients...A lot of shrimp was also added for the boarding school recipe without tomato paste during our time and it tasted good ...That's how my Mama made it for us, with a lot of Anloga sabala (shallots)...Thanks for sharing.

    It’s a flavour enhancer (msg) and looks like salt. Google msg and you will see how it looks like. A1 is just a brand. Hope it helps. Thanks for watching 🙏🏾

    Why garlic in everything now?... Our mothers never used garlic in every dish but taste good. Garlic is not common in waakye shite.
