Zesty Cucumber salad recipe from my coworker, Jennifer. When I try her recipes I'm gonna call them "Jennifer's Splashes and Dashes" :-D
Equal parts chopped tomato, sliced onion, sliced cucumber
Red wine vinegar, enough to coat to your taste
Olive oil
Sugar to taste
Salt to taste
Garlic powder or crushed garlic to taste
Pepper to taste
Chill for about an hour to marinate
Jennifer says it's also good if you add a splash of Balsamic Vinegar too.
