Chinese Stir-Fried Shallot and Spring Onion Shrimp, or Prawns, is a flavourful and aromatic dish that combines the delicate taste of shrimp with the fragrance of shallots and spring onions. The preparation time is quick, and the trick is to infuse the oil with the aroma of shallots and spring onions before charring the prawns to enhance the overall flavour.This stir-fry is both delicious and visually appealing, making it ideal as a stand-alone dish or when served with rice or noodles for a complete meal.

INGREDIENT LIST

Sauce
---
120ml (4.06 oz) water
1 tbsp oyster sauce
1 tbsp premium dark soy sauce
1 tbsp light soy sauce
1 tsp sugar
A few dashes white pepper
1 tbsp cornflour (cornstarch)
Scallion & Spring Onion Oil
---
Some cooking oil
5 shallots, sliced thinly
4 stalks spring onion, use the stem part here and the rest when you are almost done cooking the dish
Other ingredients
---
600g (21.16oz) prawns, deveined and pat dry
1 tbsp Chinese cooking wine or Shaoxing Huatiao wine

    Thx Roland, haven’t eat this before n will try it. When I was young my beloved mum used to cook prawns with Assam paste ( non spicy) just assam n cud had added sugar, so when eating can lick the shell before eating the prawns. Can you cook this ? Thx
