    Good idea! You could structure it so that in the beginning of the video there's one very practical and basic modification that anyone could do... and then just go wild with the modifications, as you've done here.

    Oh, now I have to dig into the Italian pantheon of chefs. I have never done much research on the Italian cooking scene. Lived in Rome for five years and got a first hand understanding of what it's supposed to be like. I have the DK books on pasta by Giuliano Hazan, "The Classic Pasta Cookbook" and Juliana Della Croce "The Classic Italian Cookbook". Thanks for the lead.

    I 'member when this was a cooking channel. BTW your tension screw should be spring loaded so you adjust the spring tension preload rather than the actual pressure directly so it self-adjusts with the different heights.

    He has the screw only on one side. Wouldn't this raise the roller from the other side, potentially ripping the dough due to uneven tension?

    I was thinking just a bit of flat spring steel that was then tensioned. This would have the give and float with the dough as you mentioned. At some point though the solution will not be great because you cannot get much of a range of tension with such a small diameter pin and a single point of contact. For greater tension range you need a strap that wraps the pin or a disc clutch with the disc clutch maybe being more practical for this application but then not flowing with the dough.

    Nice! Maybe your "tension builder" might beneft from a spring between the nut and the L bracket, to improve stability on the friction setting

    Probably the best cooking program in existence, in total honestly. *both tv and online* It’s a perfect and harmonious blend of cooking, learning how to cook, science behind cooking and how to do it better and always progress. An amazing blend of education and entertainment. I think Alex’s are just smart people...lmao

    just a tip, im an aprentice for a company that work with automation in industrial food production, and for dispensing and even layer of flour(typically on conveyors) we use a container much like you made like a strainer, but a vibrator that shakes the entire thing, this gives a very even layer of flour

    It would need to vibrate based on the manual crank. This might add a lot of torque to the crank resulting in a user experience thay requires a stronger user.

    @@BrasingtonAssociates Sensor on the crank, Arduino doing PWM on the vibrating engine based on the sensor reading? Or a custom circuit to contain the sensor --> engine control. That would eliminate most of the extra torque and since Alex does know electrical engineering he could pull it off in-house.

    Alex French Guy Cooking you're quite mechanically inclined! I really like your cooking videos but I like these build videos even more. Would you consider changing your format at all? It would be amazing if you did two videos a week... one video series about cooking and one video series about building/modifying food service equipment.     In both case the ultimate goal is to do the ultimate food with the ultimate tools. I enjoy the fact that cooking and engineering are put together for the same objective. I do enjoy mechanics videos on their own, but here itsthe mechanical "porn" is only a step for a greater purpose, and imo this is what makes this channel so great. Alex never ending quest for perfection in every step of his cooking.

    Putting them on kickstarter is much harder than people think because of how complicated and difficult manufacturing is. Tons of projects look awesome on their page but fail during manufacturing. Prolly be better as an expensive etsy product.

    Daniel Cheng many of the assumed awesome projects were scams unfortunately with a vaguely working prototype. This is a complete machine already functioning. Another problem on kickstarter is they vastly underestimate how much the initial run will cost. As long as he doesn't fall into that trap this could be an amazing project

    Alex, I know this series is a bit old, but if you would like to make a version 6 of this machine I have some suggestions. As Tony mentioned, that tension adjustment screw is a bit wobbly and could be improved by using a longer threaded collar with a more finely threaded screw pitch to reduce the tendency to both wobble and back off the tension unintentionally. Also, if you want to improve on your pedal controled sewing machine motor drive idea, might I suggest sourcing a motor from a commercial grade electric air compressor like those used in a mechanic's shop. They have more than enough power, are designed for heavy usage, and many are connected to the compressor via a belt drive pulley. The only tricky part would be connecting it to the control peddle since these motors are typically designed for single speed on/off style control systems rather than a variable speed controller. I have faith you can figure it out though.

    having the screw directly impinge on the roller is a bad design which i dont think a finer thread would fix, it should be changed to be a flat lever that impinges on the roller and the angle of the lever and thus the amount of force it applies to the roller be adjusted by a screw

    If you can send me the specs on the rollers, I have some industry contacts that I might be able to sweet talk into generating a quote on 1,000 rollers. The price of steel is rising. I don't know the dimensions but even a 3/8" body and 1/2" gears would be pricey. I could give the specs for a complete machine to a machinist after sourcing raw stock. Made in the USA sturdy enough to last a couple lifetimes nearly maintenance free. You're probably looking at $100-$150 per hour just for the machining. Count in the cost of a business being able to handle all of it at once, its going to be a job shop with razor thin margins. Maybe $800 per machine. You're probably better off getting dimensions from ToT or Alex and finding a CNC shop in your area and start hitting up scrap yards, you could probably end up only paying for a few hours shop time if you do your homework. I work fairly closely with a machinist, there's an undeniable art to their accuracy and precision. You could save a bit on machining by eliminating some of the form. Make sides with only 3 machined edges, eliminate countersunk screws, find rollers already on the market, find as much 'off the shelf' items as possible. Sorry for the wall of text. Probably a lot cheaper

    You don't understand how badly I want one these. But I'm too stupid to follow the build and don't care to waste a hundred bucks on a failed project. I would happily shell out for one of these tweaked and finished version though.

    You are so right about a 'great gift' idea. Just one would make all the pasta I could need, especially with the standard Italian machine attachments. I bet the 'best' Ramen Noodle dies would also be made of cast bronze, just like the higher-end Italian machine for extruding as well as rolling pasta.
