KITCHEN AID MIXER: amzn.to/33eQot4
NONSTICK PAN: amzn.to/3CfirHb
MY FAV STAINLESS BOWL: amzn.to/36j8SL6
------
RECIPE
------
POOLISH
▪200g or 3/4c water, room temp
▪Instant yeast (small pinch)
▪200g or 1 1/4c AP flour (11.7% protein)
To make your poolish, measure water, yeast, and flour into a high sided container. Stir to combine. Allow to sit, covered, at room temp for 12-24 hours.
------
WAFFLE BATTER:
▪165g or 3/4c butter
▪240g or 1c milk, cold
▪240g or 1c buttermilk
▪400g of poolish (all poolish from the recipe above)
▪5g or 1tsp vanilla
▪1 large egg
▪275g or 2 1/4c AP flour
▪10g or 1 3/4tsp salt
▪35g or 1/3c sugar
▪3g or 3/4tsp baking soda
Preheat small saucepan over high heat and add butter. Butter should foam and eventually milk solids should form at the bottom and become brown. At this point, add cold milk and stir to combine. Add buttermilk and stir.
Add poolish (everything you made 12-24hrs earlier) into a bowl followed by vanilla, egg, and brown butter milk mix. Whisk to combine. Add flour, salt, sugar, and baking soda. Whisk to combine, trying to get batter as smooth as possible...there will likely still be some small lumps.
Spray waffle maker with pan spray, add recommended amount of batter to your waffle maker (i’m using about 3/4c), invert waffle maker and cook. My waffle maker cooks for about 5min. Times may vary depending on your waffle maker
Top waffle with butter and maple syrup.
------
BERRY COMPOTE WITH CHEESECAKE WHIPPED CREAM WAFFLE
Use waffle recipe and process above.
BERRY COMPOTE
▪350g or 1bag of frozen mixed berries
▪Splash of water
▪25g or 1 heaping Tbsp maple syrup
▪25g or 1 3/4Tbsp lemon juice
Preheat med nonstick pan over high heat and add mixed berries and a splash of water. Once berries have begun to break down a bit, add maple syrup and lemon juice. Stir to combine, return to simmer and continue to cook for 6-8min until thickened.
Remove from heat and cool in fridge.
------
CHEESECAKE WHIPPED CREAM
▪225g or 8oz cream cheese
▪150g or 3/4c heavy cream
▪Pinch of salt
▪20g or 2 1/2Tbsp powdered sugar
Using mixer, whip cream cheese, heavy cream, and salt until well combined and thickened. Add powdered sugar and whip until sugar is dissolved (about 15 more sec).
Top your waffle with the cheesecake whipped cream, drizzle with berry compote, and sprinkle with powdered sugar.
------
CHEESY CHIVE CRISP HAM WAFFLE (with fried egg)
Use batter recipe from above, only OMIT THE VANILLA. To that batter add..
▪225g or 1 1/2c sharp cheddar cheese, shredded
▪225g or 1 1/2c pepperjack cheese, shredded
▪25g or 1/4c minced chives
▪2 pieces of torn up, thick cut ham (per waffle)
▪2 eggs (per waffle)
Fold cheeses and chives into non-vanilla batter to combine.
To make waffles, spray waffle maker with pan spray, add torn up pieces of thick cut ham directly to waffle maker, followed by a scoop of waffle mix, and top with another piece of torn ham. Cook until done. Top with 2 fried eggs. Enjoy.

If you have sourdough starter you can use it the exact same was that Brian uses the poolish. Prefermented dough adds a lot of character to all kinds of batters, I even used it for takoyaki and it was great.

Bri, so grateful that your channel skyrocketed over the last couple of months. Recipes are on point, personality is unique and welcoming, and videography is crispy af. If I may suggest you something to take this to a different level, visually, is to condition your cutting board, so it shines bright and that wood looks extra pretty on your videos. Anyways, keep killing it!

Thanks so much! My cutting board is super parched haha. From a photography standpoint I hesitate to oil the board because it makes it like 2 f stops darker and kind of messes with exposure. Something to think on though. Thanks

His cutting board is fine...He looks like us... His pans are old and trusty.. His spoons have stirred averything under yhe sun and will continue to do so,, his cutting board has seen better days, but will continue to perform as good as day one for a long time to come... His channel is skyrocketing because he isn't a pretentious prick, He's one of us.. Some shows have what seems to be new pots and pans for every episode... Some shows claim to make recipes better than any original....He doesn't... He just makes an awesome recipe with easy to obtain ingredients, and easy to follow step-by-step instructions..

Thank you so much, those savory waffles are the perfect recipe for me! One thing I've found especially difficult when looking for good breakfast and brunch recipes has been the sugar content; for many reasons, I try to keep the amount of added sugar and other sweeteners in my diet to a minimum. Offering savory or spiced versions of typically sweet recipes not only shows cleverness and versatility as a chef, it also shows consideration to people with different dietary needs. Thanks again, Brian!

Waffles is something I've not done a lot of because I've only ever known them topped with maple syrup or jam. Basically sugar for breakfast. But this savory option, topped with a fried egg, is brilliant. Perfectly breakfasty. And followed up with a desserty little number, maybe even à deux, why not! 🤤 Love the way you always break things down. You're hands down my favorite channel, Bri. The best waffle recipe, I’ve tried so many others but this ones tastes the best. Other recipes were tasteless and some tastes soapy ( probably bcoz of baking powder) but i really recommend u try this one. Even for beginners its really easy to make. I used 1/4 of each ingredient to make 1/4 of the recipes which gave me about 5 small waffles.

This looks Awesome. I've done yeasted waffles before, but not via the poolish method. You rock kiddo

Very flavorful waffle, but if you're like me, who likes sweet waffle with very tart jam, you need to add more sugar into the batter. I'm the kind that taste while making food, and decided to add the sugar afterwards and it mixed beautifully so you could do the same if you find that you need more sugar. Ended up adding around 50g more if I'm not mistaken. Anyway, thank you Bri, love the recipe!

I was all geared up for a week to make these today, Sunday morning. I screwed up and didn't get any milk, buttermilk of regular 🙃. I was so frustrated that I canceled the whole morning lol. After 30 minutes I decided I didn't want to waste the poolish so I just made the regular waffle mix and dumped most of the poolish in. What a great decision, the kids proclaimed them to be the best waffles ever. It has a great flavor without that sourness the kids aren't a big fan of from sour dough starter pancakes/waffles. The kids yelled "let's eat this thang" with glee before eating. Thanks Brian.

Made these this morning and were great! I would say that I only used 5 grams of salt because 10 grams of fine salt would be too much. Did you use kosher salt?

Made these this morning and they tasted incredible! They did come out softer /less risen than yours look which left a little to be desired ..any thought on what would cause that?
