Hebrews are very hygienic people, they wash everything they handle before touching. Two handles are to not to compromise on holiness. It's told by Jesus Christ that after bath a person need to wash his legs, you may think that while bathing you already cleaned fully, but to enter a place of worship or sitting for food everyone has to clean habds and legs. One hand cleaned but other hand not ckean and holdtge handle makes him again unclean. Just like a Brahmin priest bath before offerings and worship. Hebrews are not allowed to touch eachother or things considered unclean. Talmud is written many people from various generations, not a single person. Law is directly given from G-D to Moses, he given that laws to Israelites, that laws of YWAH hold sense and judgement.
