竹昇麵師傅劉永豪坐在青竹上,像跟麵糰玩搖搖板般,昇一下、壓一下、昇一下、壓一下⋯⋯ 由頭到腳,動用全身的每條肌肉,來來回回䟴近百次,維持數分鐘,讓麵糰起筋。
要麵糰起出均勻細緻的麵筋,溫柔的力度是關鍵,太大力,會逼出「骨」來,食落有渣,似未熟透的粉感;太細力,麵身軟趴趴,口感霉爛,沒有嚼勁。
人手竹壓過的麵,久久不吃也不甚吸湯,食落脆口爽彈,入口順滑,而且富蛋香,色澤亮麗。機壓的難有蛋香,因不加新鮮鴨蛋,只用別的取代,甚至添加人造色彩,所以望落淺白不自然。
正宗的竹昇麵只用三種材料:鴨蛋、麵粉、鹼水,䟴麵師傅會先打蛋,一口氣打足數打,蛋液注滿半個膠桶,加入適量鹼水備用;另一邊廂,用砝碼磅替麵粉量重,將量好的粉倒進拌麵糰機內,然後用勺子拌勻蛋液,再一拼倒進去機內,拌好後便初現竹昇麵糰之雛型,蓋上白布,置室溫一會待用。
當搬好長板櫈、大青竹,便可將麵糰放上木枱,轉身騎在竹上,由左至右,再由右至左,不停壓,麵糰於是由方塊,壓至薄薄的扇狀。
壓好後便用大刀斬麵糰,斬成五小份,以便之後逐份放入壓麵皮機中,再壓成如布帛般的一匹匹麵糰。每次過機,師傅左手落麵糰,右手灑粉,以防麵糰變糊,黏作一團。
壓好麵皮後,隨即開始切麵條的工序。由切麵機代勞切割,左手放麵皮,右手執麵,將麵條執成毛冷球般,避免麵條橫飛直豎,並為最後的量麵做好準備。
一個麵大約重一両八至二両,落鍋時只要跟雲吞淥兩淥,便可上碗,放下大地魚、蝦殼等熬成的清湯,灑下韭黄,這就是細蓉的正宗老味道。
幸好在這年代,還有年輕人肯將這傳統麵食傳承下去 ⋯⋯

    I am in the US. Extremely dissatisfied with the store-bought wonton noodles, I just began to try making them myself at home but in very small quantity. I use bread flour by adding some wheat gluten to result in much stronger flour. So far my challenge is finding noodle cutter that will cut the small diameter noodle. As the rolled out dough with high gluten is very hard I worry I might break the Italian paster roller/cutter as it is not designed to handle such hard dough.

    My suggestion is to use lye water and rest the dough overnight before you do the lamination process due to low hydration in noodle making (38%). I have a hand crank noodle making machine with 2 different width cutters ( make round and also square) which I brought from Hong Kong. I use the machine for making ramen noodles as well as steam bread (mantou) and bread. It takes a good hour or two to make 3 to 4 pounds of noodles . Not sure would this worth the effort but I don’t find good ramen noodles here in Toronto and I went to 7 of them already.

    太慢了,当年我做手工面技术比这个快多了,不过现在已经是全部机械化了,其实机械化面条比手工的口感一点也不差,重点是原材料才是主要原因。

    中國人製造出嚟的食品隨時都被加左料,例如死蟲,死蟑螂,頭髮,老鼠屎,死烏蠅...汗水..重有其它未知會係乜嘢!重有因為大多中國人從五千年前演變到2022年都係污糟辣撻,完全唔知乜叫衛生環境,所以出街食飯或者買其它食物除時食到肚疴,肚痛! 我睇完佢點整我最中意食嘅麵,明天開始唔敢食了!
