    Yeah really impressed. Despite lobster rolls not being the most advanced dish, doing such a great job at making a mayonnaise by hand is a real achievement for a first timer. He did much better than a lot of other people on this series.

Also coagulation relates to the change in the protein molecule. Once a liquid enters a coagulated/solid state it won't return to a liquid state again despite the temperature.
