Recipe: Korean Bulgogi Ingredients: (according to the video) - 1 lb Sirloin (Rib Eye, Tenderloin, Chuck Roast are good alternatives) - Ginger - Garlic - Onion - Green onion - Asian Pear (Korean pear) - Soy sauce (Kecap Manis sweet soy sauce) - Gochujang (Korean spicy chili paste) - Brown sugar - Oil (neutral oil) - Sesame seeds Optional ingredients: (to enhance the dish for more authenticity) - Light soy sauce (instead of all purpose soy sauce, don't confuse for low sodium labeled as light) - Mirin (rice wine vinegar or cooking wine to substitute) - Korean rice syrup (honey as substitute) - Gochugaru (Korean spicy chili flakes) - Ground black pepper or white pepper - Sesame oil - Kiwi as optional add on or alternative to pear. I've heard of apples being used also. - Five spice seasoning (just try it) Sirloin preparation: Poke holes to tenderize and let it sit in fridge for an hour. Salt/pepper optional for those who need it. Cover with plastic wrap. Marinade preparation: Dice up about 2 sticks of ginger (more or less according to your preference). Dice up half to 3/4 of an onion. Grate about 1/4 of an Asian pear (a little more if you'd like a sweeter taste profile). Add chopped green onions along with all the food ingredients. Add about 1-2 tablespoons of soy sauce. 1-2 tablespoons of Brown sugar. Drizzle neutral oil of choice. About a tablespoon of gochujang (more or less depending on your spiciness profile), add grated/minced garlic (about 2-4 cloves depending on preference). Add sesame seeds. Add everything into a blender and blend. Optional ingredients: You can add the optional ingredients I mentioned into the marinade, such as mirin, Korean rice syrup, sesame oil, etc. The amount you add depends on your preferred taste profile and how much authenticity you want to add. A lot of it you can eyeball for general measurements. Mirin/rice wine vinegar: about 2-3 teaspoons Korean rice syrup: about half a teaspoon to a tablespoon, depending on how much sugar was used and preferred sweetness profile. Sesame oil: a teaspoon or two Ground black/white pepper: add as much as desired 5 spice seasoning: try a 1/4 teaspoon but optional. Kiwi: use a small amount as a tenderizer, addition or substitute for the pear. Sirloin/marinade preparation: Slice Sirloin against the grain and add the steak to the marinade. Add sliced onions to marinade to help tenderize. Cover with plastic wrap. Let it marinate for 4 hours or overnight in fridge. Cooking: You can grill or Pan fry. If Pan frying, use a cast iron skillet for best results on high heat. Add in the meat and distribute it evenly on the skillet/Pan and cook for 8-10 minutes. Add in chopped onions and enjoy. Optional touches are a splash of sesame oil and seasonings if you haven't done so yet. Please leave a like if you tried the recipe. Ginger, garlic, onion, Asian pear (can use any apple too), scallions, soy sauce, toasted sesame oil, gochujang, brown sugar into a blender (there is no need to pre-dice this stuff like he did). Rib-eye steak cut thin (any piece of meat that doesn't dry out when cooked, my fave is lamb hearts), onions cut thin, into marinade for at least an hour, preferably overnight. Cook on a pan. He dumps it all in, I prefer to pick out the steak pieces and cook them in batches at a high heat first to get deep browning on them, then when all the steak is done I dump the rest of the marinade into the pan, add the steak and cook until reduced to get that brown sugar caramelized. Serve over rice, sesame seeds and scallions on top.

Dry aged meat is the best meat, especially Koji aged, it's so good that any seasoning brings the flavor down. Not even salt, if you put salt on, you'll only taste the salt. It's perfect on it's own.
