It's basically hamburger helper chili mac. I'd assume he seasoned with garlic powder, chili powder, salt, pepper, a touch of cumin, a dash of red pepper, some tomato paste, and some heavy cream. The liquid appears to be beef broth. I would personally substitute cheddar, colby, or colby-jack for the sliced American cheese, but that's just me. There aren't many things I will eat American cheese on, and I'm American as it gets lol.

I normally avoid carbs and red meat, but i would CRUSH that entire platter right now

That part gets me too lol! Went through all that work from scratch and then put some Kraft singles on top. A nice White Cheddar and Sharp cheddar mix freshly grated would be better for the dish. And I like Kraft singles but just think they work better for sandwiches specifically. Like I will use some along with provolone & or Swiss slices for home made Philly Cheesesteaks.

The main reason why is probably because of its meltyness. Processed cheese melts quickly and has a very gooey consistency that makes it an amazing binder and adds texture to the dish. It's why it's also used in mac and cheese sauce. Of course, its flavor leaves a lot to be desired, which is why a gooey cheese sauce will use processed cheese for the base, and then add a blend of more flavorful cheeses like cheddar and jack, as well as sometimes mozzarella for stretch. You can also make your own processed cheese at home very easily and use whatever cheeses you want for flavor since typically, the store-bought stuff is diluted cheddar.
