    Thank you Mimi. Note: stainless steel baby spoons and/or appetizer forks are helpful in removing the marrow from bones.

    Made it today. Had tears of happiness. The marrow just fell out of the bone when I picked it up. I quickly scooped it with the ladle and savoured the juicy, soft deliciousness. Mmmmmm. Thank you Mimi, Jen and Kerry for sharing.

    That’s what they call a reduction sauce. You’re becoming quite a good chef Kerry! I love marrow!!! 👩‍🍳 🥩♥️ My father taught me how to eat bone marrow when I was growing up.     I made this after seeing your video at Mimi's. Delicious! One note is to not add too much salt when you are doing the dry brine in the fridge. Once the both broth reduces in the final step it could easily become too salty. I think maybe Mimi mentioned this as well.

    This way of cooking beef shanks is one of my favourites! The “butter broth” gravy is so amazing! I use it as a dipping sauce with my beef patties too. Thanks for sharing this recipe

    Thanks for the recipe demonstration. I may try it but using crockpot, stove, and/or oven. Also love your teamwork and your kitchen is nice and spacious. I am always wanting more counter space

    Great vid Kerry. Say if you roast those bones with some liquid tallow and a little salt for about an hour before using the pressure cooker, you will get a deeper flavor and color to your broth (similar to browning meat before roasting). Also you can thicken gravy etc. with a little bit of bloomed beef gelatin FYI (but butter tastes better).

    I love beef shanks. I just boil the liquid down and do not add anything. It gets beautiful and thick and collagenous . Tastes incredible. If you do not have any bone broth this will work the same. Add butter if you want to.

    I've never done the bone broth with beef but they say there's alot more flavor if you bake the bones first.

    I ordered beef shanks to be picked up at Walmart! Got home and they are ox tail! Gonna cook them the same! They have more fat and collagen then beef shanks!

    There is no butcher shop where I live and I live in Arizona, lots of cattle ranches. I have to drive 3 hours to Phoenix where the butcher shops are.

    As I recall from the Mimi vid, it was 3-4 hrs on the stovetop. You see Kerry turning the burner setting down, just like Mimi did.

    I tried this, but my meat didn't fall off to be tender like yours. I cooked on low heat for several hours. The gravy was amazing but the meat not so much. How long did you cook the meat? At what temperature?

    I have always HATED gravy, it is disgusting and looks like something that came out of the rear of a duck. However, what you created is not gravy but a tasty collagen/fat meat sauce! Would love to try your cooking!

    I am struggling with chronic nausea every time I go strict carnivore. Ive tried working though it and its been persistent. Ive tried decreasing fat, smaller portions, etc. nothing seems to help. Anyone else having this problem?

    Have you tried increasing fat? I dealt with a bit of nausea and it went away when I finally started eating enough calories each day. I also needed to reduce the amount of protein I was eating. I do better when my calories are closer to 80% fat, 20% protein.
