What exactly do I need to hit/destroy to capture the sector? I can only seem to get one or two flying the exact same bird...

You can destroy and Air Defense Aircraft anywhere. However other ways to cap are destroy enemy aircraft inside the sector, or destroy a section of ground target

There are definitely mods, however don't have them. If you have discord you can hop in the WoWp discord and there are a lot of links and people through there
I would never though that there are people playing this game in 2023...
