Wood Fired Oven Lamb Roast

I cook a 5 hour incredible Lamb roast in my wood fired oven. Simple cooking with minimal effort that produced the most delicious flavours. I used Vasili's Garden herb and spices mix with some onion, tomatoe and peppers roughly chooped and let nature take over to create a delicious tender meal that was truly memorable.

    It looks fantastic and I love your enthusiasm. My wife wishes you show what the lamb looked like on the inside. How heavy was your roast?

    Hi Sami, thanks for the nice comment. From memory the legs are a little over 2kg usually, I just buy them from coles. Yes your wife is right, I should do a taste test next time and show how it pulls apart.

    Great video mate ! Can you fire up the oven same day and achieve this , or is it only using residual heat from a hot fire the night before ? Cheers

    Hi, yes fire it up for about 30mins or until you get around 250 Celsius on the top of the oven. You probably need to top it up if roasting for 4-6hrs.

    Hi, I’ve got the same oven. I found the fire goes out if I fully close the door. Do you usually leave the door slightly open? Early in the video you said close the door, but later say you keep it slightly open.

    Hi, you want to maintain about 200 Celsius over 4 hrs so if its too hot you can close the door to slow the fire down and if you need a bit more heat you can leave the door slightly open. You might do a bit of both. I hope this helps, enjoy.

    Do you close the chimney off or keep it open?

    My chimney is controlled by the door. I keep it slightly open about 10% and then close it when there is very little wood left after about 4 hrs or so.

    Hi Natalie, these come in 80cm up to 120cm internal. The bigger the oven the more time and fuel so be careful when choosing a size.

    Thanks for the tips! I was also wondering if cooking carne asada with all of the fixings on the oven floor like you do with bread is fine? Does the grease ruin the oven floor?

    Yes grease will ruin the floor, best to keep it clean.

    I know this sounds dumb, but can a glass baking tray be used instead? Aluminium is not a very good metal to be used in cooking, as it can lead to Alzheimer's and other neurological issues

    Hi Annabel, You can use glass, ceramic or cast iron trays in a wood fired oven but please ensure they are designed to withstand temperatures of 500 Celsius or more, because it is not easy to control the temperature in these ovens. Wood fired ovens can hit temperatures in excess of 500 Celsius so you need to use equipment that will not shatter or explode. Please seek the manufactures recommendations especially with glass.
