Hello mate! Great recipe and it looks great, honestly! Might sound like a dumb question but does it matter the kind of potato that you are using? Should it be a startchy, waxy or all-rounder potato? or it doesnt really matter?

Hi there. I like using Yukon gold potatoes which are a good happy medium, I’ve also used russet potatoes which are starchy and great for chips.

Hey Chef, would I be able to do this with purple sweet potato as well?

I have never made them with sweet potatoes, but I do believe it should work just fine.

Can this be made ahead of time and stored in an airtight container? i.e. the day before?

I wouldn’t recommend making it too far ahead but the day before should be fine, keep it in an airtight container or between layers of paper in a ziplock with air removed. 👍
