Star Trek VI was the last film in the TOS franchise that began with TMP in 1979 however it was not the last Star Trek film. It would be followed by Generations in 1994, the subsequent TNG movies, and the Kelvin timeline trilogy that began in 2009.

But did they know that, then, in 1991?

The interviewer was talking about this being the last Star Trek that has the original cast. William Shatner never meant that their would never be any other Star Trek movies or television shows. I do wish there would be at least two more films that could show that even though Spock, Uhura, McCoy and Scotty has passed away, Kirk, Chekov and Sulu did not stop doing their job and have welcomed working with a new Science Officer, Communications Officer and a new doctor.
