Wildflower Honey Cake | Food Wishes

Wildflower honey cake is a very old-fashioned cake made with my personal favorite kind of honey, produced by the happiest bees (I will explain my controversial theory in the video). In case you didn’t know, cakes made with only honey have so much more flavor than cakes made with plain sugar, and the batter method is one of the easiest ever. Enjoy!

    Chef, you won't ever be forgotten. I've seen you name-checked by many of what I consider to be the greats (J. Kenji Lopéz-Alt, NYT cooking chef's, etc.). You've more than made your mark. ...but don't stop making videos yet though. I love them!

    One flower honey. Nothing beats genuine Tupelo Honey which will never crystallize, plus great flavor. I collect honey. In Sicily Italy I bought Millefiori honey which means thousands of flowers, fantastic flavor, dark and deep.

    When in the US Navy and in France 1962 and 1063, we took a tour through the Alps and stopped at a wonderful restaurant with a million dollar view on the side of one of the mountains for dinner. They had a fresh salad, incredible roasted chicken, fresh sides, and for dessert they served a cake that was soaked in a honey and rum syrup with strawberries and thick whipped cream. It was so good it was the dessert of dreams.

    Honeybees are flower constant actually. They are wired to prefer the same type of flower they try first and deem appropriate if offered in abundance. The happy bee with a smorgasbord of wild nectars is still cute though.

    Caramelized honey is a phenomenal add-in for bakes! It's sort of a sweetener equivalent of browned butter. Claire Saffitz has a recipe for a pumpkin pie that uses it, and it is, in my opinion, *the* pumpkin pie. Incidentally, did y'all know that some pollenators have evolved so closely with a specific plant that they get most of their pollen from only that plant? There are even some pollenators can *only* get pollen from the specific plant they pollenate! They're very picky eaters lol

    Would you be able to start listing flour in grams? Whenever I use your delicious recipes I end up having to add a significant amount more flour, I’m guessing because you probably dip-and-scoop with your measuring cup, while I spoon mine in.

    The Safeway at Redhill Shopping Center in San Anselmo,Ca had a cake just like that one. I think they called it a Russian Tea cake. This was back in the 80's - my mom bought one just about every week. Yum yum 🙂

    Glenn - from Glen & Friends cooking - sometimes will bake a cake, and will mention something about knocking out the air bubbles by settling the cake.     Baklava calls for a honey & water mixture that is heated and poured over the philo and butter layers after baking. True story: I had recently had a redo of my 50-year-old-still got the same stove and other stuff kitchen. I decided to make baklava and put the honey & water on to heat up, and the baklava was just coming out of the oven. New glass-topped stove. Turned my back at the wrong time. Honey and water mixture boiled over. Glass top pitted. Permanently. So lesson learned - When Chef John tells you to be careful and not let the honey boil onto your stove - listen and learn.

    Havent watched yet, but from what Ive heard lately, if you can find Limnanthees/Meadow Foam wildflower honey, it's one of the best tasting honeys in existence. Also a little expensive I think though...

    I don’t think I’ve ever tasted wildflower honey. I’m in Arizona and my favorite is mesquite honey.

    I made this cake and I have to be honest that the oil was oozing out of it while it baked…and the honey in it browned a lot. It was just too much butter (and I love butter). I know this is considered foolproof but in my case I was disappointed (and I enjoy cake a lot, especially soaked cakes like this). It went in the bin after two pieces.

    Hey, European fan here! This got my attention and I tried to make it. But I'm pretty sure that despite my bread attempts the conversion to weights was off. But are you sure it's only 1 cup of flour (~125g) for all the honey, butter, and eggs? I ended up with a fairly soggy cake (still tasted good, but). I'm guessing maybe double that? Or at least that's what I'll try next time.

    Honestly this cake recipe seems pretty similar to your granola cookie recipe that I've been adapting a bunch recently. The major differences are the amount of eggs and butter and of course the use of honey instead of sugar (and, uh, oats lol), and the fact that you're making it all together in one pan. Though, I have made the cookies into bars by putting them into 8x8 pans to great success. I think it's pretty interesting how basically the same ingredients can result in different treats depending on how you prepare them.
