Wild Rabbit Pie & Foraged Birch Boletes.

In Autumn time in Tasman, South Island of New Zealand the mushrooms are popping up in the fields and forest. In my little forest, a new treat has popped up for the very first time. Birch Boletes. I want to try something new with these tasty morsels and that is smoke them with native manuka sawdust and use them to add flavor to wild rabbit pie baked in the camp oven over the outside cooking fire at home.
