Why You Should Avoid Vegetable Oils

Many of us grew up believing that vegetable oils were good and butter was bad. We were told, even by government and medical associations, to use more vegetable, seed and bean oils (like soybean, corn, safflower, canola). Now we know this advice was completely wrong. In this mini-episode, Dr. Hyman explores the origin story of how Americans began embracing vegetable oil with his guest, Nina Teicholz, and we consider what the best oils actually are.
Nina Teicholz is an investigative science journalist and author. Her international bestseller, “The Big Fat Surprise,” has upended the conventional wisdom on dietary fat-especially saturated fat. It was named a 2014 Best Book by The Economist, the Wall Street Journal, Forbes, Mother Jones, and Library Journal. Teicholz is also the Executive Director of The Nutrition Coalition, a non-profit group that promotes evidence-based nutrition policy.

    When i was a kid my bike chain rusted, so i melted some crisco and poured it on there. It worked like a charm as a lubricant. I never thought about the implications of that.

    Take a look at how sticky the cap of the vegetable oil bottle is, and you'll realize why it may be a bad idea to put something that oxidizes so easily on your hinges.

    i have ulcerative colitis, i completed eliminated vegetable oil, all oiled except high quality extra virgin olive oil & grass fed butter, huge difference when it comes to inflammation, restore back the bacteria flora in the gut

    @@udebirkang5609 i personally use the costco kirkland extra virgin olive oil, you can also use trader joes brand, or a good california extra virgin olive oil, remember its about healing the gut from inflammatory foods then re-populating the good bacteria that help repair the gut for better function

    There are oils extracted with care, so they stay healthy. If the container says flushed with nitrogen, cold pressed, is bottled in a dark glass container and kept refrigerated, it might be a good oil. If not it is likely spoiled. And spoiled oils are fats are some of the worst carcinogens we are exposed to. If the oil has a light pleasent taste it is good. If not do not consume.

    @@herbbowler2461 it’s not about that. They are inherently unhealthy due to their high omega six content. And you cannot evaluate their oxidation status if you buy processed food or from a restaurant. Just avoid all seed oils and stick to lard, tallow, butter, olive, avocado or coconut oil.

    We are making the same mistake the people who replaced lard with Crisco made by replacing real beef with Beyond Meat. The amount of chemical processing they goes into these fake meats is incredible and it’s ironic that people seeking to be health but them.

    Thanks for posting this! I will share with my community. I haven’t touched a vegetable oil in at least a decade. I love organic olive oil from Acropolis and I make my own ghee from organic butter. It’s hard to believe that people even use Crisco anymore - it’s so gross!!!

    @@__oscar7970 I do not. Where do you buy it? It’s hard to find grass-finished anything here in Ontario because we have 4 seasons and at least 4 months there’s no grass! I really love the taste of ghee plus the gut benefits

    The lady in the Video said, when you're dining out at restaurants ask what oil they used! They won't tell you the truth but will tell you what THEY think, YOU would like to hear! They also cooked foods by using oil that chicken and wontons etc were fried in, and it was reused multiple times! I worked at restaurants during 1980-1983.

    I am a 70 year old grandmother and never in my life thought about the dangers of different kinds of oils. I have been using all kinds of oil, but thank God I am relatively healthy and still eating all kinds of food I like without thinking about what's good or bad for my body. I do cook daily from scratch and rarely eat processed food

    It was only this year (2023) in January that I learned these "vegetable oils" are in fact seed oils, and have to be extracted with solvents like heptane and hexane (both petroleum derivatives). I had a whole bottle of Canola oil, recently purchased. I threw it away, and I have a deep aversion to throwing food away. But I knew I couldn't use it, and knew in good conscience I couldn't give it to someone else to use.

    There's a lot I'm learning this year too tbh, but I'd already switched to cooking with only olive or coconut oil, and a bit of real butter around 12 years ago. Had to avoid being put on Lipitor. I just don't trust pharma companies after they keep getting caught rigging the drug trials.

    This is the year my body will respond to the science of correct nutrition, there is so much to learn. For many years I have only used butter, ghee, bacon fat, avocado oil, and extra virgin olive oil for cooking. I am adding red palm oil and macadamia oil now. Reading the label of my favorite dressing, Garlic Expressions, made me sad as it contains canola oil. Making the changes has made a positive effect on me and I have never felt this good in my 81 years.

    Flax is highly estrogenic. Walnut is high in Omega 6. Olive and coconut are ok, but animal fats are best.

    I use vegetable oil to lube tires and all rubber hoses for my car. It doesn't damage rubber like petro lubes. Also use grapeseed oil for underarm and foot deodorizer since it's not toxic like commercial deodorizer. In the kitchen I rendered pork or chicken fat and store it in refrig for cooking.

    Smart and beautiful. What's not to like. The Big Fat Surprise was groundbreaking and one of the main reasons I avoid vegetable oils like the plague. Well, maybe not to that extreme since it's hard to avoid when eating at a restaurant. I have learned not to trust their claims that they use olive oil in their salad dressing and either don't use any or bring my own. How about a new book Nina, with any new studies or revisions of any ideas presented in the Big Fat Surprise.

    Thank you so much for posting this video.I have been waiting for a long time. About oil, which oil is good? Finally I got the answer today. My son has eczema for many years like 14 ,He is also very allergic to food. Like soya, wheat, milk, egg, gluten sensitivity, some nuts, I used to use any oil for frying, it did not suit him .I could not understand. what is happening to him? Which oil is he having problems with. Now I got the answer. I was using vegetable oil, calona oil ,nd sunflowers oil, corn oil, frying which was not good for his body in any way. I tried different types of oil for frying but did not get relief from any one. Now I know. Best oil for deep frying is Avocado, or ghee, or cold press coconut oil. Than you so much for once again Dr. 😊🙏

After seeing this and other similar authoritative videos on the subject, we have decided at my house to eliminate as much as possible excess consumption of refined sugars and carbos, and now, chemically processed oils. We will be using butter and cold pressed olive oil, and will be on the lookout for the other recommended alternatives.

    For years i ate my favorite junk food like chips, cookies, cakes etc which contain "Palm oil", the cheapest and most harmful for the planet and our bodies. Once i learned about it in a french documentary, i stopped buying any product that contains it, no matter how much i like it. I suggest to take your time reading ingredients, not just levels.

    But vegetable oil has the word "vegetable" in it, so that automatically makes it healthy! Right? (Snark!) Calling it "vegetable oil" is a great way to spin something unhealthy as healthy. Other examples of products that sound healthy but aren't include Dr. Pepper, Diet Dr. Pepper. NutraSweet, and high fructose corn syrup. That's clever marketing and the corporate version of "This cream puff has only been driven to church and back on Sundays!" As a general rule, you should not trust foods and food ingredients that weren't widely consumed before the 20th century. The human race didn't evolve to consume vegetable oil, trans-fats, or aspartame. The human body was never meant to consume these things and isn't equipped to handle large amounts of them. We're living in the nutritional Dark Ages. The diets of medieval peasants were far superior to today's Standard American Diet. The normalization of junk food in the modern world will someday be perceived in the same light as the rampant chain-smoking of the 1950s is perceived today. Given how difficult and time-consuming nutritional studies are, that someday may be centuries away. Keep in mind that the dangers of tobacco use were known centuries before the 1964 Surgeon General's report.

    Even fruits and vegetables are nowhere near as healthy as we have been led to believe. They are nutritious, yes, but provide nowhere near the nutrition that is provided from eating red meat and animal fats. And they also contain anti-nutrients that can be damaging to health if eaten in large amounts. For example, oxalates, which are found in abundance in spinach, are microscopic crystal slivers that are very damaging to the kidneys (and are the leading cause of kidney stones). Vegetables also contain phytic acid that binds with minerals such as zinc and iron, preventing your body from absorbing and using them. So even if you are eating enough of the right nutrition, your body can only use a portion of those nutrients, and excretes the rest. This isn't just about the profits of the corporations, when you look at the lack of evidence that was used to demonise healthy foods, and how evidence to exonerate healthy foods has been ignored or branded as 'quackery', it is becoming more and more apparent that the agenda is to intentionally damage our health at all costs. This is basically a stealth genocide, most likely to reduce the population without having to resort to direct intervention, relying on propaganda and the availability of foodstuffs. In recent years they have been going after red meat again (using propaganda to convince people red meat is the real cause of cancer), and are pushing the vegan diet hard (using celebrities to promote it, as well as social media). It is far more likely that an absence of adequate nutrition from a vegan diet, coupled with increasing exposure to carcinogens (such as radio waves from mobile phones/free wifi etc), is going to cause an increase in cancer rates in the coming decades.

    It shocks me how people will accurately point out the harm of any processed foods, but when it comes to processed products derived from meats, then suddenly that rule is broken. I'm eating a whole plant based diet. Absolutely no processed oils.

    ​@@kidswoosh5283 I wouldn't eat red meat, especially wouldn't eat green meat, seeds and nuts dangerous, fish is very dangerous, wheat can kill you, corn causes inflammation, rice causes inflammation, vegetables have ddt, fruit spikes your insulin...beans, legumes in general are risky, potatoes; the starch can kill you, mushrooms have high toxicity levels. You can have a little bit of water, occasionally, not too much, add 1 drop of lemon to a 3oz glass, every other Thursday, as a special treat, so you don't feel deprived. -- There are 10's of thousands health experts and those selling cures for everything, I read, thousands of pages, watched hundreds of health videos, trying to get a grip on a personal issues, I found that if you listen to 300 of these experts, you get 300 different takes, and most of them have something to sell. What I wrote above is only somewhat in jest. -- Nothing I'm saying here is directed at Mark Hyman, I've listened to a little of what he has to say, and don't think he is steering anyone wrong, I speak in general of all those experts out there that can't seem to agree on anything.

    We Indians have been having ghee since a couple of millennia. It used to however be expensive (still is) and thus only available to the relatively well off. Vegetable oil is basically just corporate propaganda, since they're actually seed oils

    .... And indians have the highest rate of cardiovascular disease by along shot? I think people just don't realize that body fat %, waist to height ratio, and genetics play a much larger role in cardiovascular health than saturated fat vs. polyunsaturated fat, etc. You wanna know the biggest difference between pre-industrial revolution and today? The sheer number of calories being consumed by the average person per day, and the complete lack of muscle mass on many people as they grow older relative to the amount of body fat they have.

    What do you say about the actual studies that show that seed oils show no signs inflammatory actions? Even when consumed everyday for two months straight, 3 times a day.

    I stop using most oils and only use animal lard, butter, peanut oil (if frying), and very rarely olive oil. Animal lard is wonderful to cook with, I didn't know what I was missing!

    I was stunned to find out that heart disease was almost unheard of before vegetable oils came out. What also is alarming is that it is in pretty much any deep fryer in the United States and in almost any packaged food that is made. I’ve heard now that even olive oil isn’t all that much better and that’s if you can find any that is actually real.

    i can only afford mustard , sunflower , or rice bran oil.... as olive oil is not gud for deep cooking we in south asia do deep cooking....is rice bran oil safe to use.....as it is made from outer layer of rice.....could you plz tell

    We use coconut cooking oil & sometimes beef patty drippings for sauteeing. Thank God, i am not even sick, and the last time of being sick was from February 2019! So I let my mom stopped buying unhealthy vegetable oils and we always now buy coconut oil for deep frying (air frying is not always the best option) & beef fat/drippings for sauteeing! The rest, im just felt some headaches when I worked too much on a crappy job, but one tablet of.paracetamol is enough for me. Even though i dont regularly take supplements due to expensive price, i still manage to eat in a balanced diet

    I bet vegetable oil pours out of the bottle well at negative 50 degrees. I also bet it doesn't pump well. The ability to pour out of a bottle is irrelevant to how well it pumps at the same temperature. An oil that pours really well out of a bottle may not pump very well at that same temperature.

    I understand that “vegetable oils” is actually “seed oil” but what is the difference in the technology for hempseed, walnut and flax oil? I agree that avocado and coconut oil are better but still not sure how many steps from their production to the bottle…I guess more than 3…

    It depends on a lot of factors. How frequently do you eat vegetable oils? Do you eat a lot of foods with vegetable oil in them? Do you eat saturated fat as well (as in, what is the proportion of saturated fat to polyunsaturated fat)? The more vegetable oil you eat, and the less saturated fat you eat, the worse it becomes. The toxicity is determined by the dose etc. If you body uses polyunsaturated fats to construct your cells, they will oxidise and damage your cells, but the main one is when your LDLs are made from PUFAs, because once they become oxidised, your body can't remove them, and they stay in your bloodstream, until they eventually find their way into the walls of your arteries. Once there, they act like having a splinter in your finger, the area around them becomes inflamed, and this is the beginning of heart disease. Other risks to be aware of is the formation of toxic aldehydes, which cause a wide range of problems that again, aren't predictable. The biggest risk of those is cancer, due to them being mutagenic. Chris Knobbe has done some good videos on seed oils, they are worth looking up.

    Your metabolism has a fair amount to do with it. Most people are in metabolic tophor but if you aren't then you won't have a problem with seed oils. As you age, your metabolism slows so seed oils cause problems mainly for older people.

    I love asking people which vegetable(s) so-called vegetable oil comes from. Most hesitate to answer sensing it's a trick question. This stuff is ubiquitous just like wheat (also in everything) but I'm doing all I can to eliminate them from my diet.

    Great history about seed oil ,transfer,soap,machine oils.Cook with water ,boiling, steaming,use red colour tomatoes fresh, tomato past made at home without additives.little spices and enjoy natural fats in your animals products and olives, not olive oil, fresh coconuts.fresh avocado.Go to nature.Thank you.

    These "Vegetable oils" are not vegetables at all; they're seeds or legumes, and they're GMOs on top of it all. Avoid all oils that are Canola (also called rapeseed) oil. Cottonseed oil. Soybean oil. Sunflower oil. Safflower oil. Grapeseed oil. Rice bran oil. For more info, Google "why are processed oil bad for you?"

    GMOs really don't have any problem, they're still just plants. It's not magic. If you can't pulp them up and find a dangerous chemical of some kind there's really nothing to worry about. Over 90% of corn is GMO, not that it's a huge risk but if you actually care about health try dodging corn syrup.

    Can you share your thought around the use of fish oil supplements? I hear from some experts that fish oils are a poison...then other 'experts' swear by it esp relating to brain issues like ADD etc. The fish oil 'industry' has a lot invested into the research and obviously only publish the favourable research. There is a powerful influence so it is hard to find the truth.

    Fish oil is good but you need to make sure it is molecularly distilled to remove metals. And also that it is not rancid.

    Fish oil is good for you, as it is high in omega 3 fatty acids (they are anti-inflammatory), but because it is also a polyunsaturated oil, it is also prone to oxidisation over time. Polyunsaturated oils oxidise over time due to their chemical structure, so they become rancid, but they also oxidise quickly when heated (as the heat helps to break the double bonds allowing oxidisation to occur at a faster rate). Other oils, such as seed oils, are high in omega 6 fatty acids, and they are pro-inflammatory, so they are best avoided. Doctors often talk about your ratio of omega 3 to omega 6, where you need a diet high in omega 3s and low in omega 6s. So my guess would be, fish oil is good for you, but only if you are getting it from fresh fish. It is probably bad for you if you are getting it from fish oil capsules/supplements, as it will have had time to oxidise. That push for supplementation is just another method of trying to circumvent the consumption of a healthy food and replacing it with an unhealthy alternative (while lying about the health benefits, not to mention making money from it). Natural sources are always best.

    I notice you named ghee but what is wrong with lard which only 45% saturated. It has no aftertaste and is just as white as chrisco. I've never been able to figure out why people changed over in the first place. Lard fat wipes off the cooktop with a papertowel. It doesn't require scrubbing the way oils do.

    Sadly pigs are whatever they eat. So as they are mostly fed the waste products from seed oil extraction, their lard is mostly pufa.

    Thanks to whistle blowers I start making my old coldpressed cooking oil by running the Walnuts through a meat grinder and a cheese cloth. Loaded with omega 3 fatty acids.
