The reason why "welders never discuss this secret technique" is because both of your welds are bodged welds that would get you thrown out of any reputable welding school. Firstly there is no edge prep and then your "bubble gum" weld has no actual penetration and just lays on the surface complete with all its slag inclusions. Before tyring to teach others how to weld I would suggest that you go to a qualified welding school and learn how to weld first.
