    I tried to describe the smell to my husband, and of course, was unsuccessful. So I took him to Hatch two years ago so he could experience it for himself.

    Hi Kent, I was born and raised in New Mexico eating green and red chilies and there is no Chile on this earth like Hatch chilies! My great grandmother was a Hatch! So I am related to the Hatches who first started growing these chilies. My grandmother was on a wagon train west that was wiped out by Apache (we think Apache), all but her. She was found wandering about in the prairie by another wagon train a few days later and adopted by the Hatch's as all her family was gone. Now, she was told all this because she was just a toddler when this happened and had no memory of it. I first met my grandmother when she was nearly a hundred years old when I was 15 years old and she told me this story 55 years ago. So this happened to her nearly a hundred and 50 some years ago! Probably somewhere around 1870. I would surely like to know more about my Hatch side of my family. Thanks for such good fixings.

    I Lived in Las Cruces for several years and Hatch, at harvest time, the smell was indescribable. I got to go back two years ago with my hubby and brought home some roasted Hatch peppers and a Ristra. I now grow Lots of Hatch chiles in my garden here in the Ozark Mountains.

    if you want your chiles to taste like they're grown in Hatch, keep up with the weather forecast. If it isn't raining in Hatch and is in the Ozarks, put a cover over the whole patch.

    I'd have to have a cover on them almost the entire growing season. They don't taste Exactly like the ones grown there, but close enough that I am happy. I harvest and roast them, then freeze dry them and use them all winter.@@OtherSarah2

    This year I moved from LC to Abq, and I miss the farm and the valley every day. I lived just south of where this was filmed; from late Aug through the end of the year, you smell chilie roasting/processing.

    Hype? Not hardly. I've been cooking with them for 40+ years, and they are my favorite. There are lots of different peppers, granted, but Hatch and Anaheims are the best. You need to start cooking and find out the reallity of these peppers.@@MichaelRei99

    It is so wonderful to see rellenos fresh from the fields. Grandmother liked to go out and grab a couple dozen in the field. She swore the "PINK" ones were the best.     I was introduced to Hatch chili’s when I lived in Colorado 15 years ago. My pastors wife and sister were from New Mexico and they cooked a full meal from scratch. The green chili with pork changed my world. I love chili’s to this day.

    I'm from AZ and live in northern VA so I'm used to Sonoran influenced Mexican food and although Mexican food is popular here in northern VA, I can't find it here so when I go back to AZ I want the hole-in-the-wall Mexican restaurants as they're the best. I just adore Mexican food from red chile burros, shredded beef tacos (using fried torts and not the pre-fab type). Wonderfil food and great culture.

    I lived in Durango CO for a few years. They used to roast the green chilies down in front of the grocery store and that wonderful smell wafted through the whole town. Smelled to good!

    I loved growing up in Las Cruces. Every big store: Albertsons, Walmart, Lowes, Home depot, etc. All had those big drums going with chili inside and the flames going. The smell is something I hadn't smelled in years... I need to get back there in chili season.

    I used to make chili rellenos all the time. Havent made them in years. Not sure why because I love them. Going to soon though. These really got the taste buds to jumping. I make tamales and enchiladas all the time though. Love authentic Mexican food. It is regional though. It could be the same thing but done differently regionally in Mexico.

    We use corn flake crumbs in our egg batter, I don’t exactly who came up with it, but it truly is an amazing way to eat relleno’s, color does not matter. Hatch is the best Chile anywhere

    Mr. Rollins.......this is where it's at. My father-in-law is from Albuquerque, and I've been there a couple times. Each time I leave a small piece of my heart there for the food. I could travel there just going from one joint to the other tasting all the flavors that are so uique to the state. When you sit down at a restaurant and they bring out the sopapillas with honey, or sitting down to have a Green Chile cheeseburger, or ordering a pizza.....it's it's own thing down there. We order 3-4 cases of extra hot chilis to split with dad every September, and I roast, process, and vaccum seal them for the year ahead. He makes ristras from red chiles, then runs them through a coffee grinder- uses the chopped up dried chiles in making refrigerator pickles that will knock your socks off....that heat from those peppers is just it's own special thing, and to add it to homemade pickles-- wow. Great on those green chile cheeseburgers, haha.

    Native New Mexican here, living in Arizona for the last 40yrs... The things I miss most is the incredible scenery, the fantastic hunting and fishing , and the indescribable Hatch Chile harvest and roasting of those amazing peppers!!!... I like to say the Chile 'gets in your blood' and once infected you can't do without it, I make a yearly trip from Yuma to Hatch every year during the harvest and buy three of the big gunny sacks to stock up to get me through the winter, and that's just for me!!...I also buy a couple of sacks for my daughter. Hatch Chile is so versatile you can create so many delicious dishes with it, I can eat it every day in one form or another; every thing from green Chile stew, Rellenos , enchiladas, burritos or just roasted peeled and seasoned with salt and garlic and used as a garnish for burgers or along side your fried eggs and bacon in the morning..... As I said once 'infected' you can't do without it....

    I remember getting chille rellenos at one place in my life where they stuff a big red pepper. I have never seen anyone else except you now and that place. I regularly get it with the green poblano, because thats how everyone does it around here. I remember the red one being significantly spicier.

    I grew up in North Denver Co. and loved it when it was roasting time. There were street vendors with big round rotating roasters on select strret corners. Loved it. I live in Vegas now and it's not easy finding a good chile verde.

    This looks like an amazingly delicious dish. I want to make it right away. My husband and I have been to the Hatch Chile pepper festival in New Mexico and it's the best. The Hatch Peppers are the best too.
