If you are not from New Mexico when it is Chile roasting season or never roasted Chile yourself, you are missing out. The smell is so... OMG!

I tried to describe the smell to my husband, and of course, was unsuccessful. So I took him to Hatch two years ago so he could experience it for himself.

Hi Kent, I was born and raised in New Mexico eating green and red chilies and there is no Chile on this earth like Hatch chilies! My great grandmother was a Hatch! So I am related to the Hatches who first started growing these chilies. My grandmother was on a wagon train west that was wiped out by Apache (we think Apache), all but her. She was found wandering about in the prairie by another wagon train a few days later and adopted by the Hatch's as all her family was gone. Now, she was told all this because she was just a toddler when this happened and had no memory of it. I first met my grandmother when she was nearly a hundred years old when I was 15 years old and she told me this story 55 years ago. So this happened to her nearly a hundred and 50 some years ago! Probably somewhere around 1870. I would surely like to know more about my Hatch side of my family. Thanks for such good fixings.

New Mexico is a majestic state. Easily the most underrated state in America by far. And the hatch green and red chile is the best thing in the world
Thanks for honoring New Mexico.
I Lived in Las Cruces for several years and Hatch, at harvest time, the smell was indescribable. I got to go back two years ago with my hubby and brought home some roasted Hatch peppers and a Ristra. I now grow Lots of Hatch chiles in my garden here in the Ozark Mountains.

if you want your chiles to taste like they're grown in Hatch, keep up with the weather forecast. If it isn't raining in Hatch and is in the Ozarks, put a cover over the whole patch.
@krickette5569

I'd have to have a cover on them almost the entire growing season. They don't taste Exactly like the ones grown there, but close enough that I am happy. I harvest and roast them, then freeze dry them and use them all winter.@@OtherSarah2
You’re pulling my heart strings with chile rellenos! Red or green it makes me miss New Mexico.

This year I moved from LC to Abq, and I miss the farm and the valley every day. I lived just south of where this was filmed; from late Aug through the end of the year, you smell chilie roasting/processing.
I was born and raised in west Texas and eastern New Mexico. Now I live in Arkansas. I miss that culture and food oh so much.
Randy & his wife are a great addition to your videos, Kent!! Those peppers look amazing!! God bless y'all!! 👍💞🙏
kent and this guy (and his wife) are refreshing - i did watch last week. In a world of zombies and walking garbage, YOU guys are REAL people! THANK YOU

Hype? Not hardly. I've been cooking with them for 40+ years, and they are my favorite. There are lots of different peppers, granted, but Hatch and Anaheims are the best. You need to start cooking and find out the reallity of these peppers.@@MichaelRei99
Been doing that for years just been rolling it in a omelette and putting it in a beef burrito And adding cheese and red chili sauce on top

It is so wonderful to see rellenos fresh from the fields. Grandmother liked to go out and grab a couple dozen in the field. She swore the "PINK" ones were the best. I have her Chilie and squash recipe, which is super delicious. I'll share it with you if you want. Your friend from New Mexico, Carla🎶💐💖
I was introduced to Hatch chili’s when I lived in Colorado 15 years ago. My pastors wife and sister were from New Mexico and they cooked a full meal from scratch. The green chili with pork changed my world. I love chili’s to this day.
This video exemplefies why I love the southwest and why I love when I get a load trough the southwest. The food is just divine. Thanks for sharing this gem with us!
The Land of Enchantment for sure! You two should pair up more often. Love it!!
Navy veteran I appreciate the shout outs in every video for veterans and service member who came before. Maybe next and future hugs don't hug me. I am far from a people person I don't want hugs
I LOVE Green Chile Rellenos especially when the chile is from hatch. I always grab a 20 lb bag and roast it. Usually lasts me all year long.

I wasn't sure what to think when I didn't see a blender on the counter. I love watching you have fun cooking and sharing your wisdom. I do need to get me some Hatch chiles! Thank you!

I'm from AZ and live in northern VA so I'm used to Sonoran influenced Mexican food and although Mexican food is popular here in northern VA, I can't find it here so when I go back to AZ I want the hole-in-the-wall Mexican restaurants as they're the best. I just adore Mexican food from red chile burros, shredded beef tacos (using fried torts and not the pre-fab type). Wonderfil food and great culture.
Good afternoon from Syracuse NY everyone thank you for sharing your adventures in cooking
New Mexico style chile rellenos are rad. I love the ones from Los Cuates in Albuquerquer with an egg over easy and a side of sour cream. YES!
Those Chilies look absolutely mouthwatering all battered up like that! Definitely another one I gotta try 👍 Loved the outtakes by the way guys 🤣
Cracking up at the bloopers. Love watching friends having fun.
Thank you Shannon and Kent You bring us so many good people and products. Thank you and God bless one and all. BRW Maj is not looking too happy without any beef from the chefs. Oh well next time little pardner.
I will be making a Chili for the first time soon and I will be using your recipe. I will really feel like a cowboy that day can't wait. Thank you for your years of videos you are awesome :)
As a resident of Las Cruces and someone who's interviewed Randy, I love this. Keep up the great work!
Im glad you came to new Mexico ! I was born and raised here and i love our new Mexican food!
Mr cowboy Kent, the appreciation you give for our service members means a lot as I am a Marine Corps veteran and came across you not that long ago. Keep it cookin on ole Bertha at the camp site sir!

Now you fellas done it... Good heavens I miss my New Mexico home.... I live in Texas now, and these folk do some good eats, but not like New Mexico. My mouth is waterin somethin fierce...
I lived in Durango CO for a few years. They used to roast the green chilies down in front of the grocery store and that wonderful smell wafted through the whole town. Smelled to good!
Great video! you made me want to try your recipe of chiles rellenos:) greetings from Mexico 🇲🇽
Ole boys... This was a great, heart-felt, family friendly, enjoyable video!♥️🇺🇲🥃
I loved growing up in Las Cruces. Every big store: Albertsons, Walmart, Lowes, Home depot, etc. All had those big drums going with chili inside and the flames going. The smell is something I hadn't smelled in years... I need to get back there in chili season.
Hello from Avery Texas. Love watching these video's. Always makes me hungry to watch, even if I just ate. Love you guys.
I can't get enough of these recipes! Thanks Kent! Bless your family and you!
I used to make chili rellenos all the time. Havent made them in years. Not sure why because I love them. Going to soon though. These really got the taste buds to jumping. I make tamales and enchiladas all the time though. Love authentic Mexican food. It is regional though. It could be the same thing but done differently regionally in Mexico.
We use corn flake crumbs in our egg batter, I don’t exactly who came up with it, but it truly is an amazing way to eat relleno’s, color does not matter. Hatch is the best Chile anywhere
Love south western cooking!
Thank you Kent and friends for the information and fun !
LOVE RELLENOS ! THANKS KENT !

My favorite food ever! Thanks for this video!
We travel to Hatch every few years for the festival and really enjoy bringing back a few sacks to roast at home and preserve for the year. I'll be sure to try these products.
Those look great Kent! Y'all have a great week! Cheers!
Mr. Rollins.......this is where it's at. My father-in-law is from Albuquerque, and I've been there a couple times. Each time I leave a small piece of my heart there for the food. I could travel there just going from one joint to the other tasting all the flavors that are so uique to the state. When you sit down at a restaurant and they bring out the sopapillas with honey, or sitting down to have a Green Chile cheeseburger, or ordering a pizza.....it's it's own thing down there. We order 3-4 cases of extra hot chilis to split with dad every September, and I roast, process, and vaccum seal them for the year ahead. He makes ristras from red chiles, then runs them through a coffee grinder- uses the chopped up dried chiles in making refrigerator pickles that will knock your socks off....that heat from those peppers is just it's own special thing, and to add it to homemade pickles-- wow. Great on those green chile cheeseburgers, haha.
I L♡VE going to New Mexico to eat that fresh green 🌶 chile & also visiting Mesilla or the Rio Grande🍷 Winery!
The best time of year here in New Mexico...Thanks for the video and inspiration!
Love Love Love. Thank you Kent and God bless...
Made these today! We both enjoyed them...your beer batter was so much better than the egg coating.
These blooper were the best! Need to try Rellenos some time, looks delicious!

Looks like y'all had a lot of fun with these Hatch videos. The food looks GREAT!
Thank you for all the good information
I loved that beautiful shot at the end of the vibrant red peppers🌶 contrasting with the golden grasses!
yummy cannot wait to see how these are made. My momma made these a lot
These look absolutely amazing.
Native New Mexican here, living in Arizona for the last 40yrs... The things I miss most is the incredible scenery, the fantastic hunting and fishing , and the indescribable Hatch Chile harvest and roasting of those amazing peppers!!!... I like to say the Chile 'gets in your blood' and once infected you can't do without it, I make a yearly trip from Yuma to Hatch every year during the harvest and buy three of the big gunny sacks to stock up to get me through the winter, and that's just for me!!...I also buy a couple of sacks for my daughter. Hatch Chile is so versatile you can create so many delicious dishes with it, I can eat it every day in one form or another; every thing from green Chile stew, Rellenos , enchiladas, burritos or just roasted peeled and seasoned with salt and garlic and used as a garnish for burgers or along side your fried eggs and bacon in the morning..... As I said once 'infected' you can't do without it....
Good job on the video always like when folks show our NM food done the right way
Gracias !!!!! I can't wait to try it , buen probecho !!!!!!
Hatch chiles are world famous!! My wife is from Alamogordo NM and we a very familiar with these great chiles. 👍😊👌🎉🎉
Fascinating! I have lately been on a quest to learn more about chilies, great video, Kent!
Oh my goodness! Those look like heaven!
I remember getting chille rellenos at one place in my life where they stuff a big red pepper. I have never seen anyone else except you now and that place. I regularly get it with the green poblano, because thats how everyone does it around here. I remember the red one being significantly spicier.
Thanks for cooking our delicious Mexican chiles rellenos I make all kinds of types of Chiles rellenos but I’ve never fried them with butter before great tip gracias guys 🙏🏼💕🇲🇽
I grew some Hatch chiles this year in No Ca, they are looking mighty fine, I tell you. I think I am going to try this recipe out this weekend as we are having some awesome weather for grilling. Love your food. Please bring on more hatch chile recipes I got more than I can handle.
Thanks to you, Randy and the whole crew! I do miss seeing your taste testers, aka pups.
Oh yes! Those look absolutely delicious and a must to add to my expanding "To Try" list, Got to love the fun you guys both had doing this haha, Watching you from the UK :)
I watch Kent’s videos all the time. I bought a Hasty Bake because of him. I got the Hasty Bake Gourmet Pro 258. Just got done grilling up some steaks and crab legs.
Love a good chili relleno. Never had the red ones before. Looks yummy!
I ended up ordering the Red Chili Roast from Hatch. It was great. Thanks for putting me on to Hatch Chili's. This looks like a great recipe. I love Chili Rellenos.
What a wonderful couple and a great recipe.
Kent I ordered 2 jars of there hatch Chile's a month ago because of one of your videos and they are great. Will be ordering more soon.
Thanks for sharing, made my day.
The local grocery store here started selling bean burritos with a whole chile relleno in them and they're so good, these things pair so well with so many other dishes.
Mr kent is a true cowboy cooking ledgen
I checked out the Fresh Chili Co website, and I couldn't resist buying a few products. Gratefully wishing Randy's company many years of success.
Kent is just a true genuine guy. Would love to see him compete in local midwestern circuits!
Kent them chile really look good thank you for sharing.God Bless y'all.
I understand that you may not see this. A biker brother/Marine that in his 70's had some of your biscuits . When on a motorcycle quest at his age and meeting the beat damb biscuit maker alive. He's words, not mine. You gave him a recipe that he makes today. Great t recipe for a Brother.
I grew up in North Denver Co. and loved it when it was roasting time. There were street vendors with big round rotating roasters on select strret corners. Loved it. I live in Vegas now and it's not easy finding a good chile verde.
I purchased 6 jars of various products. These were excetionally packaged. I will be ordering again and again. Very pleased, and very delicious products.
Been loving your videos and seasonings for a long time. Elk and venison taste great. Your seasonings on jerky is fantastic. For my non wild game folks beef is an excellent substitute .
That looks so good. Cheers, Kent and Shannon! 👍🏻👍🏻✌️
This looks like an amazingly delicious dish. I want to make it right away. My husband and I have been to the Hatch Chile pepper festival in New Mexico and it's the best. The Hatch Peppers are the best too.
My #1 go to feel good snack ❤
Hatch Chiles is the absolute best there is thanks Kent for showing us how to get batter to stick
