    A hint. Put ice cubes in the bowl of your ladle. Then dip the closed bottom of the ladle in the liquid. The fat will conceal on the ladle bottom. Wipe off with paper towel. Repeat until the fat is mostly gone. Enjoy your videos 👍

    One version for white adobo is to use vinegar and skip the soy sauce. Sugar, of course, is essential to neutralize the taste. Adobo in the Philippines has many versions depending on the province or city where it is prepared. The one with coconut milk or creme is usually popular in the Bicol region.     Flo, when I saw your chicken adobo, I told myself this is perfect for pork. I did the chicken the first day, followed by the pork two days later. Perfecto! Here in Hawaii, all markets have pork adobo selling as pork adobo. I made 3 lbs of chicken, followed by 6 lbs of pork adobo. I like to make a lot, for later also. Serving with broccoli with the adobo sauce is a “Winner” and “Ono Ono.”

    I want a party in my mouth! Gonna have to try this. Funny that I made the traditional adobo last night for a work party later this week. It may be too late to add the coconut milk to this batch but I'm making more tonight, possilbly using this recipe. When I heat it up for the party, I'll mix the two batches.     Adobong puti skips the soy sauce and uses salt or fish sauce. Flo’s recipe is actually adobo sa gata.

    Clearly your Costco is DIFFERENT than mine. No finger meat or pork belly have I ever seen!! This is another recipe that I really want to try. I’m a big fan of the electric pressure cooker.

    The real white adobo is made of vinegar salt garlic little sugar and pork belly. Boil the pork and reduce the water until the fat comes out and let it fry the pork to its fat.

    Hadn't cooked pork belly before... but found some slices at Save On for $10. The pack was kinda small so I use that along with chicken breast. Wow! I think my family prefers chicken but the fat from the pork (even after skimming) was so good. I served it with jasmine rice and sauteed baby shanghai bok choy tossed in sesame oil and a pinch of salt. I got some coconut milk on case lot sale so this is going to happen again and again. Thanks!

    Hi Flo! That’s how I make my regular adobo sans the coconut milk. Adobong puti or white adobo skips the soy sauce and uses salt or fish sauce instead. We put boiled eggs too on our saucy adobo. Great recipe!

    @@pbear7814 not as much as when I use soy sauce. It’s a balance of the sour and salty. I add a pinch of sugar to balance the savory taste.

    try it with turmeric or what we pinoys call adobong dilaw (yellow adobo). but my favorite is the one i always cook. its called adobong tagalog or in my words "adobo frito" which is adobo that is fried by simmering until tender then by removing the liquid/sauce and fry in oil the pork or chicken until caramelized and toasted and splashing the sauce back again to the fried adobo and serve. this is the way i cook my adobo for the past 20 years now.

    I have been hearing it much better to buy your coconut milk in cartons - not cans. I only could find it in an Asian stores- this recipe rocks - im going to try with pork belly and spareribs instead of with black bean sauce.

    This is really called in the vernacular as Adobo sa Gata or literally Adobo in coconut milk. Its a variation from the coconut region of Bicol in the Phils. The real white adobo is really the traditional adobo without soy sauce, the adobo that the Spaniards already found endemic to the Phils when they arrived in the 1500s. It is also dry, just the oil expressed by the pork. Soy sauce was a later addition when it was introduced by China with the advent of the Chinese migration. Sugar is also not a part of the traditional adobo. Up in the Northern provinces and many on the Visayas regions still prefer to cook dry white adobo. There are other version of adobo like Adobo sa Dilaw (adobo in yellow sauce) that makes use of turmeric, there's a variety of vegetable adobo, squid adobo, beef adobo - almost anything can be made into adobo, a term coined by the Spanish colonizers from the word adobar, meaning to cook in vinegar.

    Hi, There's another version of white adobo. Instead of soy sauce substitute it with fish sauce and omit the sugar and coconut milk you don't even have to brown the meat. Oh and try adding pork bouillon or chicken bouillon.

    Looks just like a Vietnamese dish I love and of course it uses fish sauce, maybe a hint of soy. Instead of coconut milk or water, we often use coconut juice. If you’re lucky to have whole young coconut, crack it open and use the juice inside.

    Flo sorry to say I can’t see this as a white adobo as color does not the same as white. I can say that this is soy adobo with coconut milk. White adobo is the original adobo , using vinegar , salt, black pepper only (no soy sauce) meat was cooked this as way of extending the shelf live. Soy sauce was introduced by Chinese and that’s when they started adding it to the white adobo and made its new version. Don’t get me wrong this version of your adobo with coco is good as well as I have made this my self. You can also make a orange adobo by adding annato powder to the non soy sauce ado. Also a yellow adobo by adding turmeric. And with coconut milk it for sure a level up.

    This dish is called "adobo sa gata", literally, adobo in coconut milk, and it is not white adobo. White adobo is different, it uses vinegar and salt, and no soy sauce is added. This is the adobo before soy sauce was introduced to the Philippine Islands in the 16th century.

    The dish you made is called "Adobo Sa Gata" (adobo with coconut milk). That's not white Adobo. White Adobo is simply made without soy sauce.

    Do you know what makes me cringe about pork belly? THE PRICE! Why is pork belly more expensive than thin strips of bacon that have been smoked, cut, and precisely packaged ~ you know what I mean, packaged 'breakfast bacon'. It doesn't make any sense other than that the highly processed 'breakfast bacon' is a much larger seller and pork belly is seen as a specialty item that should cost more. I can't even get pork belly at my local grocery stores but even at the Asian markets it's still expensive.

    That is so correct. But, a funny thing that I found is the price will go down, way down at my local WallyMart. And not the small strips. that whole big flat cut. And boy do I go bay a few of them. I am in Long Island NYC near a super-center, and I do keep my eye on price that are down. Same for the whole beef cuts. Don't sleep on this. Hmmmm Pork Belly

    Pork belly was considered to be a waste product until someone salted and smoked it to create bacon. Years ago, chicken wings was sent to the dog food factory. Now it is the most expensive part of the chicken.
