    I automatically disqualify any "sandwich" that I can't either fit in my mouth and get a bite all the way through, or one that dissintergrates on first bite. Brad's probably wins out of the 3 for me.

    to get a properly smashed patty you need to press down really hard, really quickly. That's how you get the craggly bits around the edge that go super crispy, you'll see when he pressed it down slowly he just ended up with a pressed patty EDIT: Dijon + Mayonnaise is also commonly sold as just straight up Dijonnaise

    I believe Josh's eggs are a Gordon Ramsey recipe. You can keep them more solidified by stopping the whisking a bit earlier and lowering/turning off the heat. I'm sure you know this but for the viewers. Also, Matty is an absolute beast in the kitchen! The best unconventional KZread chef out there!

    French scrambled eggs are too custardy for me, and American style are a little overcooked to my taste. English scrambled eggs are my favourite, larger curds, but still soft and creamy. That said, I’m English so I’m biased. 😅

    It's very similar but Gordon Ramsey does not use creme freche and he also doesn't use the water bath but a pan he puts on and off the heat, if I remember correctly.

    As a kid from Jersey, Taylor Ham/Pork Roll is to be held in reverence. There has never been a better breakfast sandwich than Taylor Ham, Egg and Cheese on a Kaiser Roll or Bagel.

    Yes, the Taylor Ham vs Porkroll thing was settled in a court of law when they determined that it could not legally be called ham. Now back to what's important, the monstrosity that Brad Leone made and the sheer disrespect done to porkroll.

    I know this will never get read, but I would have used rice paper for Papa's eggs. That way, you would have gotten a crispy shell with soft French eggs.

    One of my faves: lightly pan fried mortadella, spicy brown mustard, quick cooked scrambled eggs (fried quickly in a decent amount of olive oil -- big, but tender curds and no fuss), melted slice of Tillamook extra sharp, on a lightly toasted (on the inside) potato roll A BEC (or SEC) on a high quality, untoasted everything bagel is another winner

    I've been following Josh Weissman for the past few years, but I've been enjoying his videos less lately. That's probably because he's doing more of those I DID THIS STUPID RIDICULOUS THING YOU'LL NEVER DO videos. I prefer videos about doing stuff in the kitchen that I do, or I want to do. Traveling to the Arctic Circle to cook dinner, making fried chicken 32 different ways or a 100 layer lasagna isn't something I want to do.

    Cold pan or using about an inch of water in the pan are my go-tos to cook bacon!But it's even better with water, since more of the collagen becomes gelatin and makes the meat more tender, even when crispy.

    Taylor ham, egg, and cheese on a Kaiser roll is my jam! I use a toasted English muffin, “poached” egg (the pan with that basically steams the eggs - my pan is older than me) - I find the trick is a touch of vinegar in the water, and some American cheese (or Hoffman sharp American)!

    So glad you used the proper pork roll tube and not the pre sliced junk you can find in grocery stores. Joshua Weissman used the pre sliced trash in his video ranking every state's foods, and I was so disappointed NJ didn't get the proper chance to shine. The worse kind is tangier, tougher skin, and has stronger nitrate flavors all to off-putting degrees. I describe pork roll as "luxury spam" to people who've never had it.

    As a guy who works at the deli, I might be biased, but I prefer to get the guy who is cutting the meat to cut it the way I want because I couldn't cut it as clean at home. The deli worker will cut your meat exactly the way you want if you say that there is a certain way you want it cut. They can show you the slice, and if it isn't exactly how you want, say so, and they will either make them thinner, or thicker.
