Here we will look at a quick simple way you can identify which gullet bar width your horse needs!
This method applies to all manufacturers of adjustable gullet saddle. Its really quick and simple and you don't need any special tools or gadgets to do it.

But wouldn’t this plate sit higher on the horse once installed in the saddle? This leaves no room for wither clearance.

Yes that is correct, it will sit off the horses back as the panels sit in between the horse and the tree of the saddle. The saddle will not sit on the horses wither unless the saddle is too wide. If too narrow it will press into the horse and cause pain/pressure points at the point of the tree.
Im confused. Would this not make the saddle sit low on the withers and possibly rub?
It would be useful to explain that the bar doesn’t actually sit like this when in the saddle.
