nigeria isn't the founder of Jollof. the word jollof it self was a kingdom found in Senegal-Gambia area. The origin of Jollof itself has been credited to the Wolof/Jollof/Djolof peoples of the Senegambia area.

The real Jolof rice was from Wolof and there is called thiebou dienne/yapp/ganaar (rice with fish/meat/chicken). In Wolof, it is not called as Wolof/Jolof Rice, it is just called as rice. It is like Italian foods are called only as everyday food in Italy.

Fire wood jollof rice is the tastiest way of making Jollof in Nigeria. That’s also called party rice. Served at weddings or any gathering. That smoke from the firewood gives the rice it’s signature smoky flavour.

It depends on what you're used to I guess? I'm from Nigeria as well and since our rice has tons of seasoning, it's more rich on the tongue in comparison to Ghanas' so Ghanaian jollof might taste more bland and less rich than ours here but that doesn't mean it isn't good it's just the way your taste buds work
