7 Key Differences Between Ceylon Cinnamon and Cassia Cinnamon Ceylon Cinnamon 1-A highly valued culinary and medicinal spice. Price can be up to 10 times more than the Cassia/Chinese cinnamon. 2-Contains a small, negligible amount of coumarin, a naturally occurring blood-thinning substance. Recommended for regular use, eg for correcting blood sugar level. 3-Tan brown in colour. 4-Thin and paper-like textured bark that forms multiple layers when rolled up. 5-Fragile, easily broken. 6-Delicate, sweet with subtle notes of clove. Creates an excellent flavor profile for pastries, cakes and desserts. 7-Mostly originated from Sri Lanka and used in most part of Europe and USA. Cassia/Chinese Cinnamon 1-Commonly available and very cheap. You get a bag of the sticks for less than a dollar. 2-Contains a high level of coumarin content which can be harmful for the liver and kidney when consumed daily or regularly. Not a concern for occasional use. (Note: Saigon Cinnamon, a type of cinnamon from Vietnam that shares a similar appearance with Cassia, also contains a relatively high level of Coumarin.) 3-Reddish dark brown. 4-Uneven thick bark that forms only a few layers when rolled up. 5-Tough, difficult (if not impossible) to grind to powder with an electric home kitchen grinder. 6-Pungent, full-bodied taste. Suitable for Chinese braised meat recipes. 7-Primarily sourced from China and supplied to the USA and Asia. Source- www.albacinnamon.com/ www.exportersinsrilanka.com

Real cinnamon is wonderful. It has a really nice warm flavor without the bite of commercial cinnamon which is actually the bark of the cassia tree which grows in Vietnam. Cassia is much less expensive than real cinnamon. That is why it’s used by commercial/corporate entities. It’s a profit deal. They also give it a fancy name - korjinte or something like that to make you think you are getting something special when you’re not. Get the real stuff you won’t go back to the fake cinnamon.

Our understanding is that cinnamon requires tropical conditions to thrive so a NYC winter might not be compatible. That said, we are no experts on the matter. Perhaps you can find someone who cultivates cinnamon to give you some advice. If you can successfully grow cinnamon indoors in NYC, that would be awesome and we'd love to see it.

Well Billy, When a Cinnamon see a Cinnawomon the courting dance begins. It evolves into a cheap unseemly night where the Cinnawomon kicks out the drunken Cinnamom for being a jerk. 9 Months later and many court hearings the Cinnamon gives up all of his property and commits suicide by toast. But on a bright note, The Cinnawomon finds a baby Cinnamon in a pumpkin patch that becomes an alcoholic once he leans of his daddy Cinnamon's fate which leads to years of therapy and eventual drug use and the dangerous sport of Cinnamon Hearting and hopefully running off before you are grabbed and swallowed.

Great video. Watching him drag what would be potentially my food over the floor where all those nasty bare feet are walking and watching the guy stomp down all the cinnamon leaves with his nasty bare feet thoroughly turns me off of cinnamon. From this Source at least.

Combined, Indonesia and China produced 75% of the world's cinnamon in 2016 when global production was 223,574 tonnes (table). Four countries accounted for 99% of the world total: Indonesia, China, Vietnam, and Sri Lanka.[30] Sri Lanka doesn't produce over 90% of worlds cinnamon like the documentary stated

Tav Tav SriLanka produces 90% share of true cinnamon (cinnomomum zeylanicium ) . But you must have mistaken with fake cinnamon produced by China and south East Asian countries which named as cassia . Cassia has carcinogenic substance as well as it is obviously not the true cinnamon. Check out this research paper www.ijsrp.org/research-paper-0116/ijsrp-p4973.pdf
