I bought a double burner 200000 btu outdoor "camp" propane stove for about 200$ on amazon. Its not quite as crazy as the heat in these videos but its way better than electric. If your dad has anywhere at all outside he can cook its a reasonable option.

As an Austrian trying to preserve the cooking of my grandparents. Also know others like me that love great food are trying to recreate the love your ancestors have put into the traditions of their life force. Food in opinion is what binds us to the location and time of are ancestors.
Can Dad please do a lesson on how to purchase a good wok? What material? What kind of handle? How wide & how thick?….

just get a carbon steel wok then season before use then you gonna have a great wok for many years to cone.since i live alone i just bought a 9 inch carbon steel wok from TJ Maxx for $8 then i seasoned it, now i can get wok hei everything i cook.

It really highly depends on what cuisine you're mostly going to use it for. For my country's cuisine, we mostly cook a lot of acidic foods so an aluminum one would be ideal (and in my opinion, it's the most versatile). For Chinese cuisine, a carbon steel is preferred.

Guys! You can definitely get wok hei at home with induction stove and good technique! I do this all the time and its def restaurant level wok hei. Induction stove is more powerful than regular gas stove and heats up wok wayyy faster due to that way it transfers heat. This means with the right tools and technique, your wok can recover its temp really quickly after adding ingredients. Thats how you’re able to achieve wok hei. Nowadays there are induction wok burners and those are very powerful. With the regular home induction stove, you can get wok hei by stir frying 1 portion at a time. I dont have a gas stove. I remember trying to stir fry at my sister’s place (she has a gas stove) and thinking how awfully weak it is compare to my induction stove. Needless to say, i did not get wok hei on that gas stove.

Have you seen kenjis video on outdoor wok burners? Have you tried using one maybe in the yard or driveway? I'm skeptical.

You're skeptical about Kenjis advice? I think his method with propane burner is valid. I think most table top cooks aren't getting wok hei. I think the oils and ingridents kissing the flame is actually what needs to happen to develop that flavor. Thus it needs to he an open flame

Yes sir I ordered one this past Xmas and it works extremely well. Be careful tho. Too much wok hei isn't good either lol.

I agree that it's hard to get wok hei on a home stovetop range; I think I get pretty close with my light cast iron wok on my electric coils, as long as I let the wok get really hot.
please teach us to use wok burner high pressure
Wok hei is not only about smell. The taste is different too. However, wok hei taste and smell can last only 1 or 2 minutes after plating. After 2 minutes, it's called hot.
Restaurants also use a lot of msg

Do you guys have a video on how to season a wok. I finally bought a proper carbon wok and now am too afraid to use it, because I haven’t seasoned it and feel I’m to white to not ultimately f*ck this up.

I've got to get the wok blow torch burner for my outdoor kitchen.
On a regular gas burner you can bring the edge of the pan to the front or middle of the burner while you toss what you’re cooking and get something close.

But it’s also about the amount of heat in a proper wok burner. It’s probably about 3-4 times hotter than the best of the best home cooker you can buy. You can’t get the wok hei no matter what Yiu do at home.

Bro I got the ultimate Father's day gift for you. Grab a iron outdoor fryer propane burner. Make sure the element is the cast iron variety. You can even look for a high output version w/ a high output regulator. I have a regular non highout put one I use and it has tons of BTU. If your dad doesn't have one he'd probably love it, it's not the fighter plane engine level they use at the resto that's foot controlled sometimes, with like a billion BTU but it's still crazy hot and powerful compared to regular stoves.

I don't think that's possible. Maybe the portable butane gas stove which could be put on the table for hotpot, or the mini gas burner for coffe, or the small gas stove for camping will be a good subtitude... The electrical stove definitely can't do. See the "Yangzhou Fried Rice" episode ( 🤓 from minute 6.36 onward) where Mr.Lau Sr. shows & teaches the techiques to make a portion of nice homemade fried rice with "Wok Hei" aroma. He actually used that kind of stove 🤗 But if you're an idealist, just buy the industrial restaurant standard stove to get that charred smoky aroma out of the food 🙏☺

I haven't seen it done, or tried myself, but it should be very feasible to approximate it with a large torch. I can't remember if Alex French Guy tried this in his wok series, but I know he ended up building an industrial burner setup. That said, when it's cold outside and I want teriyaki, I roast it in the oven and char it after with a torch. Almost as good as grilled.

Yeah no, imma call it "wok thermal radiation" from now on.
Saying, "charred" ... I imagine a lot of English speaking people are going to bring out some burned food and start calling it "wok hei."
It also litterally means Wok Smoke

you can get pretty hot with an open fire pit, but it's nowhere near as convenient as flipping a switch to cook

I wonder if all the people who cooks on youtube with a table top cook, who's cooking a dish that would have a wok hei flavor at a resturant even establishes it.... probably not. Your dad mentions establishing wok hei sometimes as he cooks. In your honest opinion how close do you guys actually come to achieving it?
