What is Honey Coffee? (Part 1)

This is a deep dive into honey coffee, and the honey process. Part 1 illustrates how honey coffee is created at the farm (or mill) and how it differs from traditional wet-process coffee (washed) and dry-process coffee (natural process). Hopefully this video, and our Coffee Library FAQ article help clarify exactly what we mean by honey coffee. Part 2 focuses more on roasting and taste of honey coffee.

    so that second to last photo of the Dry Process (very dark fruit)--they must do another step to remove the dried fruit from the beans that are inside. Do they also do another process to get the reddish stuff off of the Honey process that's shown in that same photo on the right?

    Yes, from that stage in the photo the dry process coffee goes through a hulling machine to remove the dried cherry. It's similar for the honey processed coffee. What you see in the photo is the dried parchment, which is removed during the hulling process.

    ​@@SweetMariasCoffee this is amazing information. Before I roast ill pick out bad beans. Sometimes I'll find beans that are smooth and a lighter color. Is that the parchment or could they just be immature or something else. Thank you so very much. Also please suggest some videos on advanced roasting skills. I use an approx 200g metal cube over a gas camping stove. No thermometer, just sight and smell basically.
