    Hi Kimono Mom. Very much enjoy your video, especially little Sutan is such a cute kid. I have a cooking question. Many recipes say to make Dashi. Low heat the kelp/kombu at low heat for a long time (10-30 min), and then high heat to boil for the bonito for short time (20-60 seconds). Why low heat kombu and high heat bonito?

    Reminds me a lot of Jun's Kitchen channel where he has the cats watching in the background. He lets the cats smell all of the ingredients as he prepares them to keep the cats entertained throughout the video. It seems Kimono Mom does the same. Good stuff! I bet the kid will grow up to be very smart

    Right around 7:08 Sutan is getting bored. She is like: "I know all these unami lessons, so boring. I drink dashi everyday. I know these. Say something I don't know." Then at 7:22 the guy clapped his hands, and Sutan is like: Oh, I know how to clap too. See?

    I'd love to be able to say what I'm about to in Japanese, but sadly, I only just started studying it 2 months ago and I don't know it well enough yet. I really LOVE this video about Japanese culture. I'm a strong believer that a deeper understanding of culture (which almost always involves food) is one of the best ways to bring people from different cultures together in peace. Think how amazing it would be if all the world was on friendly terms. /sigh I can dream. Anyway, もえさん、ありがとございます。小山さん、ありがとございます。

    As an American, that has been studying Japanese both in and out of the classroom for many years, you are in for quite an adventure. My advice may help you avoid some things that will slow you down. Don't use romaji to learn vocabulary. Ever. Any language using the Roman alphabet tends to steer the speaker towards that language's pronunciations, which is why romaji can hurt proper pronunciation of Japanese words. It seems you're already familiar with hiragana. おめでとう。That knowledge ultimately will help with learning kanji. Start watching as much Japanese tv as possible, preferably without subtitles. Avoid anime and as a primary source for learning because the grammar is oftentimes incorrect and can be considered not only rude, but can be downright insulting and disrespectful. Proper manners reflect on you, and the Japanese take it pretty seriously. Most shows put at least some of the shows show a some of the text in Japanese right on screen. Shows with interviews, or interactions between guests are best because you hear the language at the speed it is normally spoken. It might sound like one long, super fast barrage of sounds, but as your vocabulary and knowledge of their unique and quite challenging grammar grows, you'll be picking up full sentences before you know it. It's not an easy language to learn by any means but stick with it. It's totally worth it. がんばってください。

    Hello from Dallas, Texas, USA, and thank you very much for this wonderful lesson on dashi! Here we are fortunate to have a Japanese grocery store not too far away, and they sell a miso paste that has dashi already in it. After I tried it, I always buy this kind, but I never really knew why it tasted so much better than the other miso. Now I do! Next time I go there, I may try to get the ingredients to make my own dashi at home.

    I feel like I learnt a lot about umami and daishi! I also love when Sutan tried the fresh bonito and you asked for some and then you both tried it together! Very cute.
