The liver produces bile, which is stored in the gallbladder. Bile is alkaline, not acidic. It is alkaline so that when it enters the small intestine it can neutralise the hydrochloric acid from the stomach. The bile neutralises acid to maintain an optimum pH for the enzymes in the small intestine.
Bile acts to emulsify fat (lipid) droplets to smaller fat droplets.
By emulsifying fat (lipid) droplets, their surface area is increased which increases the rate lipase can break down lipids into fatty acids and glycerol.
