It's a misconception that people would die once they eat a Sukuna finger. They actually die in the sense Sukuna completely takes over their body and overwrite their soul. So if the eaters soul as strong enough, (for instsnce megumi or maybe gojo) we'll see something similar to what is megumi right now, still existing but can't overtake.

Wouldve been better if they made a story where gojo did eat it being over powered and able to suppress sukuna. So then they have to coexist as two different people that are overpowered so when gojo tires from a fight sukuna switches. By the end they separate bodies and then fight making it the best hyped up fight. I wouldve loved to see this dynamic of a story. Dont grt me wrong, gege did awesome already with the build up, but i feel like i wouldve liked my way of the story, also making gjo the main chsracter
