    My current favorite cheap/lazy recipe is mushing up chickpeas with a fork and mixing that with salt, pepper, garlic powder, and cornstarch (to bind it), then frying up little chickpea pancakes with the mixture. I put them on tortillas with whatever sauces I have on hand and top them with pickled jalapeños, onions, or raw spinach. Sometimes I'll dip them in Sriracha ketchup. Edit to add: sometimes I also sprinkle sunflower seeds on top. So many ways to change this recipe up.

    tip for the oats, since berries can be more expensive I reccomend putting some Jam/jelly in it, a really good and really cheap alternative

    @@thelilgiraffe8380 most has pectin, I do check it but honestly I've never seen any with gelatin, it can be in jam but it's still rare and I have yet to see any with it

    Jelly isn't worth the health decline (as small as it is). Frozen berries aren't expensive, you'll get a lot of vitamins as well

    Yes! Same here. I put nutritional yeast on top and have a side salad with it. It's one of those meals that leaves you feeling totally satisfied.

    Ti Jay a large number of grocery chain stores in today's society have vegan butters like Earth Balance available now. It really is true when they say there's a vegan version for literally everything!

    So, cabbage. Stays forever fresh in the fridge, great to add in to a lot of dishes, tasty both fried (finely cut) or boiled (whole leaves) as a side, cooks easily in the oven, makes decent salads and you haven't even used the whole head yet 🤣

    I just learned to make roasted frozen veggies straight from the freezer! This is from Feel Good Foodie. Preheat oven to 450. Put empty baking tray in oven to heat up. Put FROZEN veggies (broccoli carrots cauliflower combo works great) in large bowl. Toss with olive oil, salt, pepper, any other spices you like. Throw veggies on baking tray. Bake (roast) 15-30 mins, depending on size of veggies. That’s it!

    When I first made the switch I was also a bit overwhelmed by all the ingredients that something would call for. (Aquafaba????? lol) My advice is to try something new every once and a while, just because you may find a new staple for your kitchen. But vegan recipes don't need to be hard to make or use exotic ingredients. Rice, beans, veggies, oats, fruit. Plus, watching Rose's videos will give you tons of ideas!!! 😊

    Here is how approached the vegan diet for over two years now Breakfast: fruit or fruit smoothie Lunch: fruit, smoothie, or salad Dinner: salad or Google vegan recipes until you have at least six that you like Snacks ( this is important, because everyone snacks) fruit, nuts, seeds, dates, hummus, I hope that helps. I found this way to be easy and delicious!

    frozen veggies are just as healthy for you as fresh veggies. My nutritionist told me this because I was afraid we were eating too many frozen veggies. We do buy fresh veg but not often as it usually gets pushed to the back of the fridge and forgotten. The only thing we miss when eating frozen veg over fresh is the crunch.

    So true! The only veg i insist on buying fresh are the ones that dont freeze well (like zucchini). Frozen fruit is a lifesaver, too, if youre going to use it in smoothies or recipes.

    Sometimes frozen are HEALTHIER because they are flash frozen within hours of being picked. “fresh” veggies could be a week old or more.

    Hemp milk is soooo easy to make! Just hemp, water, BLEND. You can strain it if you want but I kinda liked having some of the “pulp” in there :)

    Well in spain we make it with unflavored soda (mainly Casera) but it's basically the same. It's also common to make it with the not so good wine. But it's a big thing here, you can even buy it already done in big or tiny bottles and it's also served at bars.

    My quick go to is tofu that I cook with a ton of store bought taco seasoning and I eat it in tortillas. Sometimes with salsa and cheese. Sometimes with avocado.

    One of the easiest meals my husband and I make when we’re short on time and/or money is veggie stir fried rice. We use frozen mixed veggies, rice (either fresh or leftover), and either crumbled tempeh or cubed firm tofu for protein with sesame seeds and store bought Szechuan or Korean bbq sauce on top. Sometimes we’ll add more toppings but it depends on how late it is when we get home from work.

    I add some protein powder to my oats and not only does it make them DELICIOUS but it's healthy and extra filling and cheap too (depending on the protein you get of course)!

    I add ground flaxseed. It adds extra fiber, omega-3s, protein, and makes the oatmeal more filling.

    Quick vegan meal I often prep for work is cut up aubergines, mushrooms, onions and garlic. Thrown in a pan with balsamic vinegar. Really basic but pretty nice and filling

    I do something similar. Just smash banana, put pb on top of an apple slice and put over the banana. Also I found a way to something similar to a toast with peanuts: blend them but stop before they're peanut butter, they will be like a dough so you can put on a plate and use like pizza. It's like a cookie crust but I believe if I mix with something that helps to keep the form, this could be a sweet pizza base!

    This video had me rolling over sometimes LOL! I love over night oats and I will start doing them again. They are good with some coconut milk and water, bananas and other fruits. Beans and rice is also a cheap meal with a salad on top. We add vegan cheese sauce, olives, green onions and cilantro. We eat it at least once a week.

    one of my simple&cheap dishes: boiled rice, kidney beans(or any other kind), steamed broccoli and salsa ✌ (it's awesome with tahini-lemon sauce and avocado, when you're feeling fancy)

    what I do with oats sometimes (usually when I run out of soy milk) is use a teaspoon of peanut butter and hot water and just let it sit overnight. Great when you realize its 11pm and you are out of milk :D The result is actually quite creamy and the peanut butter also adds a bit of protein and goes great with banana

    There are two traditional spanish recipes that have all the same pros of chilli: cocido and lentejas. They’re both veganizable and bean based and great for mealprep 😍

    @MsRainingDays Why do you assume that’s his/her only meal of the day? The other meals could more than make up for the low protein in this meal. Of course, one could always add fake ground beef as well (that is full of protein) to their pasta meal.

    I like to have a Sweet Potato with, wild rice (rice o-roni) and broccoli or some kind of veggie. When I don't feel like having meat. That is one of my go too plant based meals. And cheap.

    Oh and cornbread to go w your chili: - 2ish cups flour of your choice -1 cup corn meal -1- 1 1/2 cups sweetener of your choice -1 cup aquafaba, whipped, from your beans if you used canned (chickpea great, canellinis ok, red kidney beans meh, black beans nope) or 1 cup chia gel, for an egg substitute -1/3 cup melted margarine -dash each of salt, BS, BP & (opt) cinnamon -water for consistency. Bake in a greased 9x13 @ 300 til done :)

    There is a wrap i keep going back too, its mashed chickpeas with chopped red onion, celery and peppers. Mix in some onion and garlic powder, i like to also add paprika. and some hot sauce or you can add whatever dressing you like and put it all in a wrap. SOOO good.

    I love making minestrone soup. I get vegetable stock some canned mixed veggies, can potato, can tomato, can bean and pasta. Add some spices (I usually put salt, pepper, onion and garlic powder but you can add whatever you want) and it usually feed my family of four (me my sister and my mom and stepdad) for 2 or 3 days.

    Yeah, though it is important to soak those that need to be soaked for as much time as needed, otherwhise they might contain toxins that can poison and kill you if you eat as much as one bowl

    @@itsepocx actualy it is quite lazy, putting the pot is no difference to cooking rice, and while it cooks you can do something else. Same thing with curry out of the oven, basicly no work, filling and it makes great leftovers. About a Cup of cooked chickpeas, 2 pears and about 500g cauliflower. A can of coconutmilk and some spices. It bakes for 30 min at 200 degree celsius and rests another 15 min in the oven with the power turned out

    Black bean salsa: 1 can black beans drained. 1 can diced tomatoes. 1 can sweet corn drained. Mix together and add taco spices paprika, cumin, chili powder, garlic salt, onion powder) can serve hot or cold. I put over everything. Potatoes, rice, pasta. In salads or wraps.

    Oat pancakes are super cheap & easy to whip up! Grind up oats to make oat flour, add flax meal (optional), some sweetener, a pinch of salt, cinnamon or vanilla (optional), baking powder, apple cider vinegar or lemon juice, some water or plant milk & cook. These also freeze well, pop left overs in the toaster to reheat. I eat mine with peanut butter & banana, just like Rose showed but on toast, super filling & satisfying!
