@@clairehering1720 it's so hard to explain, definitely not sour, the easiest way I can explain it is nutty with a bit of a mild cheese taste and very umami. It's so unique that it defied all my expectations. It's pretty cheap from what I remember so I'd say it's worth trying at least once :)

Natto is just okay to me. If you’ve ever had chinese style instant zhajiang noodles, it tastes a lot like the sauce that comes with it. Rather than stinky cheese, it smells more like earwax to me lol. I like to eat it with green onions, the sauce packets, and a bit of kimchi on top of right. Honestly when I’ve eaten it i haven’t noticed a ‘mucus texture’ it’s like eating firm edamame that has a small amount of a creamy sauce on it. It appears much more slimy than it actually is. I swear the strings just kind of dissolve in your mouth but the bean is really firm and creamy. It’s hard to explain since it’s a combination of textures but it isn’t unpleasant. The smell to me reminds me of coffee beans. It’s not as intense as fresh coffee but that is exactly what it smells like to me. A light whiff of coffee. The flavor is kind of the same, a bit bigger like coffee but the more I ate it the less bitter it tasted. For me It’s best paired with something else with the natto being used as a condiment to add a depth of flavor. It’s kinda nutty coffee like without much intensity.

I love nattou. Been eating it as long as I can remember. Sometimes I just eat the beans 😂 Since I was young when I first started eating it, to me, it didn’t taste or smell bad since I had nothing to compare it to. As an adult, I would compare the smell to a slightly off latte lmao. Kinda stinky in the way dairy is, but it somehow has an undertone of being roasted to its profile (even though I’m pretty sure they aren’t?) Edit: I suppose nutty would be a better description.

I heard that it goes well on a bed of rice. Balances out the texture and flavour.
