We share ONLY information from influencers who STRICTLY follow The Forks Over Knives message, carefully vetting material from lesser known sources. It's one of the things we appreciate most about Chef AJ's show... Even if we've never heard of the interviewee, we can trust they aren't promoting olive oil and unnecessary supplements in their fine print.
Unlike many other WFPBNO groups, we avoid sharing tempting recipes packed with technically compliant ingredients on the red end of the calorie density scale. Those inevitably cause weight gain for people like Chuck and me -- our group services people who have trouble shedding weight, like we do.
Sharing the Good News from the Forks Over Knives doctors, we encourage lighter foods and the 50/50 plate as much as possible. When we share recipes with nuts, flours, dried fruits, syrups, etc., we usually flag those recipes as appropriate for only rare occasions such as holidays and social gatherings -- but not for daily maintenance. We never share anything with coconut because it's a saturated fat and a no-no for those of us cultivating cardiovascular health.
We encourage discussion about personal experience, wins, and struggles. Many of our members are experienced and happy to help new members with suggestions/ solutions. A surprising number of our members have been on this show.
Chuck and I are by no means perfect. We are in our mid-60s and are now paying taxes due on 5+ decades of terrible food choices. Both of us hated vegetables, preferring processed junk loaded with too much salt, sugar, saturated fat, and cholesterol.
It isn't always possible to fix all the we may have done... However, it IS possible to make VAST improvements according to the limits of our genetics and abilities.
We want everybody to TRY -- to not entertain discouragement if they can't reach perfection. We are both immensely happy with our new selves, even though we are still flawed. I purposely share our failings once in awhile to encourage others to keep going.
To join our group, applicants MUST answer our required questions. Try again if you weren't admitted the first time. We require this a bit of commitment because we take this Good News seriously -- and are seeking motivated members to do the same.
Every October, our Supper Club hosts a THANKSGIVING PRACTICE POTLUCK so people can try heart healthy versions of traditionally lardy holiday fare.
It's critical to be ready for these important social events. Failing to plan is planning to fail.

ODE TO THE POTATO
Potatoes are my food of choice,
they have not made me fatter.
In fact, they made a smaller Me
that caused my friends to chatter.
You can't have oil? Why all the carbs?
When do you eat? -- they natter.
I answer slowly with a smile:
It doesn't really matter.
I eat when hungry, and when not
-- while eating in between.
I eat when bored or craving junk...
When happy, sad, or mean.
I pack potatoes in my purse
So junk will not enslave me.
When tempted, I just eat a spud --
Potatoes always save me.
I do not have to wonder IF,
or WHEN, or WHAT, or WHY;
I eat a spud to stop the noise --
much happier am I!
I eat whenever fancy strikes;
Yet weight's no longer tragic.
My brain is freed to have more fun;
now size 8s fit like magic.
I'm trotting up the stairwell now,
My blood labs looking healthy...
No pills for you! --My doctor gasps,
You're looking Healthy-Wealthy!
But don't you miss those chips and beer?

My food is blander -- that is true --
But LIFE IS SO MUCH FUNNER.

    That's my mom and stepdad! ❤ Mom discovered this lifestyle years ago and I have watched it transform her and others' lived We watched them both transform their bodies and it took us a few years, but we eventually came around to eating the whole food based. I have always been heavier, and for the first time in my life I'm not yo-yoing. My husband is passive coming around WFPB and we have watched his blood pressure drop and his lab work turn around. It's so exciting!

    What a great video with "real" people. I have been following Wendy's group right from when it had not long been started. It is a GREAT supportive group to help you on your way to health and keep you there. Wendy is very attentive, passionate and helpful here. She is personally very involved, does a lot of reading and loves to share her knowledge I couldn't recommend joining WVegan highly enough.......

    Such a pleasant couple Wendy and Chuck are! Funny, she prayed he'd have health crisis or accident that wouldn't kill him, but steer him in the direction to eat WFPB, and instead she was included as a recipient of her own prayer. Like they say, "watch what you wish for." Ha Ha. But great story. So glad to see them both turn their health around. Love that she shared the Treat Loaf and Fruit Compote recipe. Always good to have something healthy ready for a treat. Thanks Chef for having them on.

    Along with bowl of oatmeal I eat a medium red/new potato for breakfast every morning, topped with pepper, bbq sauce and/or salsa, both low sodium. Also a small side of black beans topped with balsamic vinegar and same condiments. And then for lunch or dinner along with cooked veggies I'll have a half or whole sweet potato, topped with cinnamon and thin layer of spray margarine (about 1/4 tsp). Like Wendy and Chuck i was also educated on potato benefits by Dr. McDougall.

    Loved their idea having thanksgiving practice supper club to share many options for family gatherings … and enjoying the holiday. Those gatherings are very challenging … sounds like their group is growing and fun for everyone involved.

    Yeah Dont Pray for bad to happen! Lol. I do understand the struggle though...after much praying and struggling and temporary weight loss and regaining that weight....i finally made a change and lost 40lbs and stuck with it....didnt know it was called plant based lol until i started educating myself on nutrition and stumbled onto dr Neal Barnard...Dr Greger etc and decided to go 100% plant based for nutrition and health. So funny...i eat my seaweed in the morning too lol Make my own oven baked french fries no oil no salt...except a tiny bit of oil on the pan to keep from sticking......taste great! But now im hungry for potatoes!!! Lol

    I think your diet is good I just tuned on I have lost weight eating potatoes over a year but I don’t put any extras on then I use a butter substitute as I like butter and eat a lot of vegetables I have arthritis but I stay in the uk where the wheather is damp I have lost a good lost of weight eating potatoes 🐝🐝🐝

    This couple are lovely, and i enjoyed their story and i am so glad they are doing well. I try not to be negative in comments, but i do want to offer that what they eat in a day is not what everyone doing this lifestyle HAVE to eat to be successful. If i were a person who had never delved into wfpb, and came upon this, i would be like, no way after they reported their daily diet, it sounds terrible! And it didnt sound like they eat potatoes much. Maybe they do, but it didn't sound like it. The lack of veg too really struck me, as well as her saying she measures out 10 grams daily of cruciferous veggies?! To each their own, and I wish them health, but please don't think you have to follow their daily eating patterns to be successful.

    Actually, they do eat potatoes every day. Wendy explained that she follows Dr. McDougall's starch solution. She also said she eats cruciferous vegetables every day for lunch. They also eat lots of fruit in addition to the potatoes.

    chef AJ, if you see this, I have 2 questions. Can you link the program where there is info about combining fat with carbs. I eat my ground flax or chia with a mashed banana. Also I’m curious about fasting for slender people. Do you have to have a BMI over a certain point to fast? I am quite small and thought that I therefore, I cannot fast. I was told that I cannot do the Fasting Mimicking Diet due to my weight.
