You seem smart enough to know what you're doing and I don't mean to be condescending, but I worry that you might stretch yourself too thin and overwhelm yourself by taking on too much at once. Rather that track the calories of the sliced up chicken on a meal by meal basis, just work out the total for the chicken and divide it by the number of meals you split it into. May be a little more one day, a little less the next meal, but that doesn't matter as you will have eaten all the chicken by the end of the week anyways. That first weight dump will most likely include a bunch of water weight, as the body consumes its stored glycogen it releases a bunch of water. I am first week of a new diet as well, and i dropped a nearly 4 kilos overnight. Can't all be fat. I cut my calories too hard on the first day, and so i have been bumping it up a bit. I noticed that when i did some weight training my strength was way down. I think this was because of all the glycogen stored in the muscles being depleted. Really don't want to lose muscle by dieting too hard. I am just in the period of getting things balanced as well, will take some time to fine tune but thats ok.
