Hello & welcome to another video! Today, we’re gonna try some of the craziest dumpling hacks we could find from the Internet, via a new hack challenger: So Yummy. We put these hacks to the ultimate test to see if they could help us make any structurally sound dumplings, ideally of the fully-cooked variety. We tried 3 different dumpling folding hacks - a lotus dumpling hack, a rose dumpling hack, and a shell dumpling hack! What do you guys think? Would you eat any of these bad boys?

    As someone who has made dumplings, allowing the dough to hydrate before working with it/rolling it out will help with the consistency! Dumpling dough should be slightly stretchy and has a consistency closer to clay. It may also help to add a little less water to the filling so that it holds its shape a little better :)

    Totally. It also looked like an egg, or partly egg based dough in the original. For something like these hacks I would look at rolling it out with a pasta roller and cutting rounds with a circular cookie cutter just to make things as even as possible.

    I agree. Ive made a few dumplings but haven't gone fancy like this but ive learned the fancy rolling techniques from watching a bunch of dumpling videos. They need to roll thinner and use less dough. Like on the rose one cut the dough ball into thirds and roll paper thin I bet it would be perfect. I know my granddaughter and her best friend want to learn how to make dumplings I think maybe we should try these. I also will buy a good packet of dumpling wrappers from the asian market too. Just in case lol. They usually have 6 to 8 types in the freezer case. But disclaimer-i used to be a chef and learned pasta work from my old boss so I have made pasta from scratch for years and years. Its not much different. I do think for first time trying these fancy shapes I might go with an egg pasta dough to have more leeway and resilience in the dough. The only dumpling weapper I haven't been able to get right yet is the crystal wrapper for shrimp har gow. But I'm working on it lol

    that's autolysis! very frequently used when baking bread, enzymes will start developing the gluten when flour and water are mixed and it will be easier to knead

    Nasoya sells both egg-based and vegan dumpling wrappers and they are definitely stiff like in the hack. The Chinese ones at the Asian grocery though seemed to be somewhere between Nasoya's and Tyler's---but much thinner. I researched and learned there's a difference between dumpling wrappers for steaming (like in dim sum) and for pan-frying (like potstickers or Japanese gyoza). It's worth looking up if anyone's interested.

    Actually, as a Taiwanese, many of these dumpling hacks are pretty legit, as in my grandma has taught me. The rose one though, not so sure because it seems like a lot of dough to very little filling ratio.

    you might be able to get more meat in w practice; I imagine the key would be to flatten it a bit before folding the dough over so you could make sure it covers as much area as possible without adding too much girth or overflowing. no clue how to make dumplings tho so idk there could be plenty of factors I'm not taking into consideration

    It is better to do with a group. My first attempt at dumpling making i was alone and ended up making dumplings for what seemed to be hours lol. I ended up with about 120 dumplings because I had no idea the recipe would be that large lol. 1 pound of pork and one of shrimp is a lot of filling lol I had to portion it in half and keep half in fridge while folding lol

    So for that lotus one, they definitely used a cookie cutter to get such even circles without any tapering at the edges, which isn't what you usually want for dumplings, but works for that method.

    Theyre not using hot water dough, theirs is so yellow. Probably pasta dough or otherwise enhanced with eggs. And yup, dumpling dough should be rolled so that it tapers/gets thinner at the edges so that they don't become too thick or gummy when the folds/pleats are made. Those hack dumplings would not be satisfying to eat if they were made with dumpling dough and steamed like that because the dough would be too thick

    Honestly, their dough looks like pasta dough, not a dumpling. This is why, I think, it holds shape better. So you guys did a really damn good job with what you had.

    god i really miss this channel. it was such a break from saf's channel's energy (in a good way!) Like if Saf's channel was like really good pasta, this was that good wine and bread pairing. even though the pasta is amazing, you still need the wine and the bread breaks. it's like, you need the pasta so that the wine and bread taste good, but you need the wine and bread so the pasta tastes good. each element enhances the other!! This channel has this gentle, kind of casual vibe I LIVE for which is such a nice contrast from the structured, more 'productiony' vibe that Saf's channel has. sometime you want a deep dive into the fake scam ads that tiktok is casually allowing to run rampant on their platform, and sometime you just want to watch your favourite duo try to follow dumpling hacks that are needlessly complicated! I hope you guys eventually return to this channel as well. Love you both loads!

    I think in the video of So Yummy they don't flour their dough as much, letting it remain stickier and easier to pinch the dumplings closed. I also suspect they actually rolled out a sheet of dough and then cut the circles out of that instead of cutting a doughnot shape in 24 pieces

    I'm agreeing with their guess at 25:54 - that it's not dumpling dough, but a clay or play-dough material. The dough in the So Yummy videos is thick, and it retains shape and texture without the elasticity you'd see in a dumpling dough. I'm wondering if the "meat" they used might be fake in many of the clips, too. It keeps perfectly round shapes, and it kind of reminds me of the fake ice cream made for food photography.

    @@Caldella I think it's likely pastry dough. It's yellow because it has butter in it as the binder. Pastry dough also doesn't have that elasticity and is much more moldable. Also the fact they didn't have to flour it means it's definitely not a real dumpling dough because it should be sticky - hence why you use the flour while working with it. I highly doubt it's play-dough or clay because it doesn't have the texture you'd expect out of either. Clay would have to be pretty wet to mold and play-dough has very tell-tale signs when being squished and such.

    @@Caldella I get that it looks clay-like, but it's definitely some type of dough. Maybe with butter or egg added, and well rested. The filling is probably chilled so it's easier to shape and roll into perfect balls. It's all perfected to look good on screen, clearly.

    Lotus dumplings: it's common in many places that each hole at top has a kernel of corn or a pea in it, so you could form them around that and use the veggie to hold the hole open.

    Next time, consider rolling the edges more so they’re thinner than the center- so when you fold them, it isn’t as much dough- this also is good for your filling too- you can add more.

    Guys I appreciate you showing us not to be afraid to mess up in the kitchen. It's every novice's experience but we usually don't see it on video. From what I've seen the dumplings had more dough and not enough meat is because they're not rolled out thin enough. The way to fit more meat is use the same amount of dough but roll it out thinner, like at least 3 times thinner than what you did in the video, especially at the edges or parts of it that will be pressed together or bunched up. Don't be afraid they will tear while steaming; they really won't unless the dough is torn before it goes in the steamer. The meat won't increase in volume, in fact it will shrink when you cook it.

    That "dumpling dough" from the other channel looks more like pie pastry to me, which probably contributes to why they held their shapes like they did in the reference video.

    A hack they didn't show you: roll out a larrrrrge rectangle of dough, then use a round either cookie cutter or biscuit cutter to get the perfect round shape. You can re-roll the scraps, too!

    We do this for perogies too, I can't imagine trying to hand roll dozens of equal sized circles. Old school farm style: just a glass instead of a cookie cutter.

    The dough in the hacks video is definitely not dumpling dough (hot water dough with just flour and water), it looks so yellow. It probably is pasta dough, enriched with egg, which makes it bind better and hold its shape

    I’d recommend using pre-made dumpling dough slices as they are even circles and have that more play dough like consistency

    Suggestions for your dumpling hacking: 10:35 more dough 16:30 again, more dough so you can have more meat - also pull the meat out one by one so you can have more even pieces 19:48 you could possibly roll it out less so it’s thicker and you could maybe go for more meat and stretch it out as needed because it’s not as thin 21:46 another way to cook is to fry in the pan with oil for 1-1.5 minutes then pour in 0.25 cups of water and steam until the water has evaporated (Remember - these are only suggestions!)

    Hey now, some of the flower shapes turned out quite lovely! I think the visual process of making the shell dumplings is quite nice, but the end result (even from the hack video haha) just look a bit like wrinkly shar pei puppies lol

    I so appreciate all of your videos on both your channels, and they always make me feel better, whether you both are off traveling in neat spas, sleeping in ice, combining every lipstick into one, going to Japanese container hotels, running a boba shop, trying out funny things you bought on Amazon, or making & eating dumplings, I absolutely enjoy every video!!! Thank you!!! Also I fell asleep mid watching last night and came back this am and the fact that you even edit each segment to clearly tell us where we are in the video…you both are such wonderful editors and I appreciate the extra commitment and time!!     I applaud your dedication to making the dough! I think these might have been accomplish-able if the circular dough the grocery store sells was used, since they're a bit more uniform. However, your dough looked very well-made and tasty.

    Part of the issue is your dough is not all the same size. They rolled theirs out to a constant thickness and then cut it with a cutter of some sort. Also, keep the dough cool until use would prob help as well. (They prob used part rice flour and part AP wheat flour, but not 100% sure.)
