Glad you are doing OK. Thank you for your support.
Love a savory sage sausage.
Sage sausage is the best!!!! Thanks for this too!!! BTW, LOVE that hat!! Nice and dirty, just the way God intended. Also makes for some "seasoning" if you run short in the kitchen!!!! Lol!!!!!!! God bless the 2 of you, have a Merry Christmas, and I will see you in the next vid.
Thanks Kent! Only a few days left in the season for us here in NC!!
Kent you do know how to bring back memories!!! Merry Christmas Kent&Shannon!!!⛄🎄God always bless you both!!!🙏🙏

Nothing better grew up with deer meet and wild game have fun God bless
11pm...Sounds like a good time to watch Kent....MERRY CHRISTMAS!
I’m so excited for this sausage and most of all Bob Wills and the Texas playboys, for background music! Kent your fantastic!!
I've been making my own hot sage pork sausage for years. The ground pork sold in the supermarkets lack enough fat, so I use reserved bacon fat, which adds a touch of smokiness. This is a great time of year for anything with lots of sage in it! Merry Christmas, Kent and Shannon! 🎄
Merry Christmas everyone watching, God bless our beautiful world
Thanks for the sausage making tips. Looks great!! Always appreciate your helpful tips. You are always very conscientious and concerned about doing things the best they can be done. Also you always are considerate of others taste and preferences. Its great to have you all around, Ken and Shannon!!! Merry Christmas!! John T.
I have fond childhood memories of venison sausage patties served on a bun at summer picnics.
I just can not watch you without getting hungry! God Bless, and have a VERRY Merry (and Safe) Christimas!
Looks amazing Kent glad you’re on the mend wishing you and your family a healthy & happy Christmas and New Years. Keep it up
Deer sausage is the best thing ever.
I can smell it from here! YUUUMMM!!!
Great video...I like to cube the meat, put the seasonings on it and put it in the fridge overnight, then run it through the grinder. I find I get a better distribution of the seasoning and don't breakdown the fat.

Thanks for the recipe but touched me you thanked me a Veteran of foreign war. My hat to you sir! Liked and subscribed! More venison education needed for me. Ty!
Too cute watching his dogs tail wagging behind the table.
Happy New Year cookie and fam
Thank you. Simple preps, tasty food and great instructions
Enjoy all your videos, most several times. Can't say enough good about them. Especially your " Cowboy Cures " . Love reading all the comments and learn a lot from them. wishing you, Shannon and the pups the very best of Merry CHRISTmas and good health.
Mmmmmmeat!
Started cutting venison w/ bacon ends to save $$ years ago, Kent. Used to use Boston butt cut but the box of ends gives the fat to bind and the pork flavor. Always enjoy your channel. God bless you.
You must have read my mind. I was looking for a sausage recipe. Opened my phone and there you are in my recommended videos. I'm going to use your recipe. Thank you .
Now you're talking how to stretch venison. Thanks for sharing with Kent and Shannon , sure would enjoy a plate of that on a chilly winters evening with some fresh made biscuits and maybe some pepperedy gravy . Stay safe and enjoy the holidays. Fred.
Looks good. I love grinding my own meats. Be blessed
I just bought your cookbook Faith, Family & the Feast and I just want to say that I'm really enjoying it! The photos, scriptures, and stories are so beautiful!!!! I can't wait to try the recipes.
Thank you for sharing. I’ve never had bad results with one of your recipes!
Those sausages sure do look mighty delicious there Kent 👍 And it looks like your furry crew was thinkin' just about the same thing, haha ;) Thanks for another great video brother!
Love your videos! I've been making my own sausage for many years and I can't wait to try your recipe. Thank you Mr. Rollins. Never change. God bless you cowboy.
My Daddy would make deer sausage all the time when I was growing up. It was so delicious. ❤❤❤
Thank you Cowboy Kent for sharing your wealth of knowledge of butchering, cooking, and cast iron care. I appreciate and enjoy seeing people use cast iron because it reminds us of what America was built on. I enjoy seeing new videos every week. Keep up the good work.
Thank you KENT ! Merry Christmas and these will be great ANYTIME !
Loooove sausage. Great recipe and song
Yes! Always make that test patty. You sir, know your stuff. Love this, from my home state of Oklahoma. Sage, fennel, and caraway in sausage for me is paramount. Merry Christmas and a better New Year's.
your channel always has an interesting presentation along with the information. so many people just know how to eat, and they can't even boil water.
Looks mighty good Cowboy Kent. I remember mom and dad used to make all kinds of sausage even rabbit sausage. That really brings back memories. Keep up the good work and God bless you Shannon and the pups.
YAY! You just answered my question as to what type of ground pork to ask the butcher for so I can make German Meatloaf. It uses 1 1/2 lbs of Ground beef, 1/2 lb Ground pork. Had zero clue what part of the pig to ask the butcher for.
Wow.... I just made sausage from your recipe above and was it a hit with my wife. Thanks.

Thanks Kent🤠 That's a Great tip on making a Sample of a New recipe :}
For the past year or so, I've taken up sausage making as a retirement fun passtime, Mostly pork - breakfast, Italian and Polish sausage. Now and then I'll do a beef summer sausage too. It's is very enjoyable to be able to customize the finished product to MY tastes and to know exactly what natural ingredients are in there, no wacky chemicals or who knows what. Thanks for sharing the recipe and the tips. Good eats says I.
venison pork sausage has been one of my favorites since the ealry 1960s, expecially when spiced as chorizo, or, as my late uncle Gary made it into a dry, aged salami, I wish some of the cousins would have taken an interest, unfortunately I lived too far away, but that venison/pork salami was amazing
Great video!!!!! I grind straight venison burger all the time just cook the burgers up in butter and cook them slow it will change your mind! Oh and just salt and pepper!
This looks Absolutely Scrumptious! 😋
I really enjoy the recipes that you make. Reminds me of my childhood and memories at my Grandparents. Merry Christmas Kent & Shannon.

Cowboy, this brings back wonderful memories. The day after hog killing day was sausage making day. I got into a bit of trouble cuz i just couldnt wait for Grabdma Hewitt to get there to make sausage. I started adding spices and oh boy! But I learned about making fresh sausage, and how to season it correctly. Enjoy your sausage! Blessings to you and yours ❤️☃️🎅🤶
A little maple syrup is really tasty also! Merry Christmas! Thank you for all the great recipes!
I didn't know that it was easy enough for me to do. Thank you Cowboy Kent, and Miss Shannon.
This VET appreciates the shout out! Thank you for your patriotism ! Great vid. I have some deer and a pork loin- not exactly fatty but has some. I made a chili using this mix of meat and wanted to make and freeze some sausage Pattis. Thanks for the vid
Ain’t nothing better yummy!

I’ve been making my own for years. I call the local grocer and have them save me the untrimmed pork butt. They get them in vac sealed 2 per package (13-17 pounds) then trim them and put them out individually. I want them before trimming and use 3# to 7# venison for each 10 pound batch. I usually make 20-30 pounds a year.
Loving the venison recipes! Bob Wills is still the king.🍻
Hey thanks for all these Great video’s I hope you and family have a Very Merry Christmas. Also your book A taste of Cowboy just arrived at the house and I am looking forward to making your recipe’s thanks.
Thanks Kent!
Thanks for sharing that recipe if I ever get some venison now I know how to make my own. Used to get it from a butcher in Thibodaux but you had to be on a waiting list to get some.
Love that sausage! A+ Video, K&S.

Awesome video cowboy Kent.
perfect i was just thinking about making some venison sausage .. thank you sir
Always enjoy venison sausage, this looks great.
Years ago one of the reasons I loved December is that a co-worker would go deer hunting and if luck was with him he'd come back with a deer or two. He'd have it processed and I'd get enough deer sausage and links for my freezer to last me six months. Thank you so much for these instructional videos on how to handle and process freshly harvested deer. Only had a general idea about it before; now I know.
Thank you, Black Friday was hog killing day for us. The next day, Saturday was Lard rendering day. Merry Christmas. God Bless and stay safe.
❤. God bless and Merry Christmas 🎄
