    I heard the wobble in your voice when you were talking about why you didn't name them. That would be tough for me too. Love the company that comes and takes care of all the hard parts of it...

    U were wondering about the ham hocks…when I can get them, they are wonderful for brown beans…get dry pinto beans and soak them..put them in a pot with onions and the ham hock and cook for a couple of hours…mash some beans when they are soft to thicken the liquid…add spices as u see fit. Then take out the ham hock and make sure all meat from bone is in the pot…fix a bowel of the soup and add fresh slices of onion and they are wonderful…it is hard to find the ham hocks in the store

    Morgan !! Just look at ALL THAT BACON !! Oh man, I'm drooling now.....nothing better than some pork. I have a pork belly recipe I'm gonna throw together this weekend for a brunch we are heading to. You guys did so good with these pigs, and you didn't need to deliver them either which is a bonus. I'll tell ya, if God didn't want us to eat animals, he wouldn't have made them out of meat ;) Keep on rockin, young one. Massive fist bumps from Canada (and still no snow......)

    The ham hock is down by the trotter😉 They are best smoked in baked beans, soups Depending on hog type, thickness of steaks usually 15 chops per side You ordered a bunch of cuts we avoid, in favour of sausage The weights on the sheet could be hanging weights.. That is gutted, hair removed or skun, and cut in half.. This isn't necessarily the amount of meat you received back

    I had 3 pigs back in 2015. Then we moved to the city. I cant wait to get to raising our food again.

    Nice job Morgan!! We usually trailor our pigs to the butcher so the fact that you have a service like that is phenomenal. We name all our meat animals except for poultry, and the fact that you didn't speaks loudly to your love of your livestock. It'll get better, i promise. Anyway, WELL DONE, hope y'all are doing well! ❤

    Wow what a great price for processing! I enjoyed your video. Lots of good cuts of meat! Ham hocks so delicious in beans, or with greens like collard or kale, split pea soup.

    If you like southern style greens, ham hocks are great for that as well. I tend to cook in instant pot for about 20 minutes by itself, then add the greens (i prefer turnips, but collards, mustard, kale, or a mixture would work) so yummy! Especially if you have some chow chow to go on top.

    We raised two wild pigs that we caught in our trap a couple of years ago. Like you, we didn't name them. My husband butchered them himself and processed them too. They really didn't get as big as we had hoped but having that meat was nice. You can use a smoked ham hock to make Spilt Pea Soup. I need to find the video I watched on you tube where you can make it in the Instant Pot in just a few minutes.

    Thank you for the video SO sorry but I don't like smoked bacon, last year my husband got smoked pigs in blankets. I tried them but they upset my stomach, I don't like the smell of smokey meat, turns my stomach. ( sorry T M I )
