Peel before cooking and mash with a potato masher when the apples start to soften, this way you won’t need a food mill. Depending on what type of apples you’re using a little brown sugar, maple syrup or apple cider, a squeeze of fresh lemon juice and a pat of butter can be a nice addition, as well as a few shakes of ground cinnamon. If your apples are on the sweeter side you may not want to add any sweetener at all. It’s all about your tastes and preferences.

I have done this many times, leaving the peels on, (it does flavour and colour the apples) and adding a bit of cinnamon, and sweetener, when the apples are done cooking. I use a potato masher instead of a food mill, which results in a chunkier sauce. I have also made variations with raisins, or dried cranberries. So delicious!

I've been making applesauce for a long time. Mom and grandma passed it down. Some like to sweeten, and some apples do need it a little, but we don't usually find it necessary. I used my Folley mill until I found a mill attachment for my Food Center! if you make a lot, like we do, it's a game changer. We freeze our applesauce in the fall and have it all year long! I like to make some fresh for our Thanksgiving meal. it's part of most holiday meals in our family.
