Viper Roll - How To Make Sushi Series

In this episode, Master Sushi Chef Hiroyuki Terada shows you how to make one of his original rolls from 5 years ago when we opened; it's called the Viper Roll, named after a Viper snake, but instead of using snake in our recipe, we use half a piece of BBQ Eel which is amazingly delicious.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    In ratio: Mirin 6 Sake 4 Soyu 2 5 medium sized rock sugar (adjust according if amount is lesser) Flambe the mirin and sake and put in the rock sugar. Once ALMOST melted, add in the Soyu and reduce to desired consistency. Note the once cooled, it will be thicker. Doesn't matter which amount you use for the ingredients as long as its in ratio. For example: Mirin 360ml (6) Sake 240ml (4) Soyu 120ml (2) Rock sugar 3 medium sized If it's: Mirin 600ml Sake 400ml Soyu 200ml Then rock sugar is 5 medium sized

    The imitation crabp is a no no , i actually prefer not to go to sushi restaurants that serve that crabp, and one of the asparagus was wrinkly, also Hiro you left the black part from the stem on a piece of avocado, i think your restaurant would be the exception though since i have been following for a while, the restaurant is in my bucket list and would like to have a feast like the one you prepared for Robert and guests from deer meat for dinner.     And what was with the plastic bag of eel...? Totally could have skipped showing that it came pre cooked and sauced in a ghetto bag and just showed it come out of the warming oven stuck to the tinfoil. But hey, I'm the guy that serves hotdog sushi and triscuit mini pizzas to house guests so.. who am I trying to kid.

    It's basically just specially treated eel. It's the same if you brought salted fish or something. And also the microwave is the method you're supposed to cook the eel. It might not be your taste, but it's probably really good. Also this is something easy you can cook at home. (well some parts are still hard)

    Imitation crab has a really bad reputation in the US, but it's because it's used as crab imitation. In reality, it's a fish cake. It's similar to hating tofu because you see it used as imitation meat, of course it'd be crap, but it may be better used as tofu instead of meat cheap replacement. Also, i suppose his imitation crab, the one he uses, is not the same crap some cheap restaurants use.

    Some friends & I get together to make susi and paint on canvas every once and a while. I am so sad that I am the only one who likes eel sushi, but I keep trying to get them to try it. I have only used the canned eel, didn't know they had it packaged that way. Going tonight for another get-together. I will look for eel packaged like that at the Asian market. THANK YOU!
