    SUGAR Nerds.. So I get a lot of ill informed numpties saying how this is so full of Sugar, go figure? So I use 2 teaspoons of sweet condensed milk, which is about 50% Sugar, that's about a Teaspoon of Sugar to beat in with the eggs. There is enough froth here to make 2 cups of coffee, so at most, I use 1/2 a teaspoon of sugar in my cup.. I think sometimes the keyboard engages a little quicker than the brain.. So those that express "disgust" in the huge amount of sugar in this coffee? and then wonder why, I make a point of saying I don't usually like sugar in coffee, might need to get over it.. All the best.. And to the rest of us that are not fans of sugar in coffee, it's not too bad.. Enjoy ;o) Steve

    I'm from Vietnam, and thanks to your video, I have made myself a very delicious egg coffee. Now abit of information for those keyboard "hero": The coffee in this "egg coffee" have to be long-roasted Robusta beans: very dark and bitter with almost no taste of sour. And vietnamese coffee brewing style is quite "condensed", using 21gr of ground beans and 70ml of hot water. So when you add the egg cream on top, it's not sweet. People who are complaining about the "full of Sugar" maybe from Western countries or using Arabica beans (lighter and sourer than Robusta) or putting alot of water in their coffee. When using Arabica coffee for this drink you need to lower the amount of condensed milk and sugar.

    I just wanted to say I really appreciate how you deal with the negative people watching your video. I always drink coffee black, no sugar but I really want to try this, especially since the black coffee is meant to be very dark with no tanginess and the sweetness is not as much as people see.     @@cuongdang3304 Bro, it's getting there in Saigon. A couple years ago it wasn't this way but with the economy picking up, everyone can pretty much afford a scooter so the roads are getting worse. To get from Go Vap to District 1 takes about an hour sometimes. And it's only really 5-6 kilometers apart. Going from Go Vap to Bien Hoa seems to take forever. Traffic tends to begin building up at around 3pm and stays that way till 7pm. Throughout the day though the streets are busy. But still, not as congested as Ha Noi Edit: Lived in Saigon, My Tho, Long Thanh, Bien Hoa, Hue, Hoi An, Da Nang, Than Hoa and Ha Noi. Traffic varies greatly depending on wealth of the region.

    @Furn I find crossing roads in Ha Noi not that hard lol. Just raise your hand and cross, bikes will go around you. You do need to avoid cars and buses tho.

    It's said Vietnamese egg coffee is a liquid tiramisu! Thick, creamy, and flavorful, it tastes sooooo delicious. It's the one and only egg coffee in the world invented by the Vietnamese.

    I watched this video this morning and went out for the ingredients today. I've just had my first cup of Vietnamese egg coffee and I'll be keeping it in my repertoire - delicious!

    Steve, if you want to keep the coffee warm, the Vietnamese often stick the cup in a bigger container with hot water that goes halfway up the outside of the cup while it is brewing. Keeps the coffee warm. :)

    Yes they did that once or twice but unless the coffee and basin were hot in most cases it didn't work. The second video I did on Coffee in Hanoi, the lady put it over a T light and it was super hot, the First "worst egg coffee in Hanoi" they put it in a bowl of hot water and it was at the best Luke Warm. What do you think.. :)

    Now that you mentioned it, I loved how it was served in the 2nd egg coffee video. The way it was served and the ambiance of where it was served was so awesome, too. Yep, definitely go with how the 2nd location did it. :)

    Dont try that with egg coffee. High heat will make the liquid become thicker, and the egg will be “overcooked”. Drink egg coffee as fast as you drink an espresso.

    It's not just dark-roast, it's robusta coffee too! It has its own taste, more caffeine as well. We have about the same situation here (in Miami, FL, USA), with the very popular Cuban coffee. It's very cheap and uses a lot of Robusta coffee, so most people take it with sugar and steamed milk. So if you can't find Vietnamese coffee, you might like some Cuban coffee, or some brand of coffee with chicory in it. Before you could buy Vietnamese stuff in the store, Vietnamese people here all bought Cafe du Monde from New Orleans. It is possible to enjoy these as black filter coffee, but it's jolting and you don't want a big serving of it. Anyway, this looks delicious and fun, I'm definitely going to try it!

    I'm about to try coconut milk coffee ... got a little can of Aroy-D coconut milk to try putting in instead of my usual heavy whipping cream. French Market coffee in the orange can, a "phinn" coffee maker, less than $3 at your local Viet market, I have great coffee every day and it costs me like 25c a cup, less than a dollar counting the heavy whipping cream.

    Most importantly, you need to beat eggs and condensed milk for a long time (15-30 minutes) to reduce the taste of eggs ( do it with machine). When I was a child I used to whisk eggs (only red yolk and milk) with a pinwheel and beat with my hands. It make me so tired But f * kin It's sooooo good !!

    An alternative to raw eggs/condensed milk is if you mix the yolks in with sugar over a double boiler (mixing in milk if needed) til you get that custard like texture. It's like how you'd do for a tiramisu.

    I know this is an older video but I appreciate it! I've always wanted to try this but didn't know it was so easy. Disclaimer: I used a regular pour over. Tip: If you don't like sweet coffee, use a cup that gives you a larger surface area. Less egg foam in each sip. So good.

    Your instruction is very easy to understand! I’m Vietnamese & I live in Saigon. This coffee style is more popular in Hanoi than Saigon. It really hard to find a coffee shop around here that serves it. So that, I’ll try it at home. Hope to have chance to visit Hanoi and try the authentic one!

    Tried using a wire whisk, and a diy pasteurized egg and followed your instructions. It turned out perfect, i don’t know what the taste of a real one but i know it tasted perfect.

    Oh my Chris would like this. We have a Vietnamese coffee brewer. He likes to try all different types of coffee. Two month ago he had to go to China for work and had a coffee that he loved and now he makes it at home. I don't know the name of it,, he got it in Hong Kong,,, it's a Coffee Tea. He had to go back come September and is looking forward to trying other new things. Good to see you Steve,, I like your jacket. HI to Michele.

    Yes Tammy, I also saw in the US many single cup filter pots that sit on top of a cup in much the same way, they would work too. Do you think you'll give this a try.. ;o) I suspect you'd love it, I'm addicted 😳☕️ Steve

    I used to use this drip thing a lot before I came here but now I'm an espresso guy. The problem with the French press is though it's quicker, it can't produce the wonderful aroma the Vietnamese drip can.

    @@CaffeAddict Yeah, I think that is the point. The Vietnamese drip can produce a much better aroma since it takes longer, and you suppose to wait. That is why, you probably encounter a lot of people sitting at the coffee shops early in the morning, behind their coffee drip on top of their cups, waiting in a very relaxing mood in Vietnam.

    wowsers... just had it and didn't expect to like this very much. but this one is definitely a keeper! very smooth rich and decadent and with the bitterness of the coffee to kinda break through all of that it just works! thanks for this one. cheers :)

    This looks good! I have a one cup coffee maker that i bought at Barney's Coffee And Tea Company years ago and it reminds me a little of the Vietnamese coffee maker. It's good for making one cup of coffee in a hurry.

    Wow. I'm from northern italy and I grew up in the 70's having the same coffee with egg. The only difference is my mother used sugar instead of condensed milk and she poured the coffee straight into the egg sugar whip. Great memories, the world just keeps getting smaller. Thank you.

    I'm Vietnamese and the idea of raw eggs scares me. But now that I have watched this. I don't think it would be that bad. Definitely gonna try it. And hopefully going to try the original one day.

    I’ve been using raw eggs in my protein shake for years. I’ve learned that if there is any salmonella its always on the eggshell itself. Washing your eggs before cracking them open is the best way to prevent salmonella from getting into your foods. Obviously if your cooking your eggs, then salmonella is not a problem because you’ve pretty much killed any salmonella in the cooking process.

    Indeed, it's not so much in the shell as in the fecal matter left behind from Sick Chickens and Poor Handling. In some countries' like the UK, they have cleaned up egg production and the are largely safe. The world should follow suite.. Raw eggs have been eaten for centuries, if your hens are cared for, your eggs are safe. Thanks Abe, good points

    If one was really worried about salmonella I'd suggest cooking them in a water bath. (Like melting chocolate for ganash)
