I like Potatoes iPhone? What’s an iPhone. No mobile phones. Computers were the size of your living room. The milkman still delivered whole milk, cream and maybe butter to your front door every day. The mailman walked his whole route carrying mail in a big leather bag. Girls were required to wear dresses to school and the female teachers too. Male teachers, what few there were, wore sports coats and ties. Homework?!! Are you nuts? Not until 7th grade. Kids were expected to go home, change out of school clothes into play clothes and go outside to play. TV was for parents to watch the news, Dad to watch sports, Saturday cartoons. Everybody on tv smoked. Trash was burned in the backyard in a steel drum. The ash man came when the barrel was full and emptied it. Life was very different then than now. Slower paced. More secure and more predictable. More peaceful. WWll was over. Vietnam Nam had not yet begun. It was a decent time for me growing up, but definitely a different world then.

I'm nearly sure in her old recipe box would be a recipe for this that's decades old. ...Thanks for doing this video and reminding me of the recipe. it was an odd one from the era as many recipes were, especially from the 40's through 70's. ...BTW...you do a great job in hosting your show. Lemme tell ya, as maligned as Velveeta is, it's a miracle food product. I wouldn't use it as like, cheese, but in a cheese sauce, dip, or soup, it stabilizes the real cheese and keeps it from going grainy. It adds that smooth, velveteen mouthfeel, and I am never ashamed to use it in the privacy of my own kitchen.

  • @tomadkins2866

You're absolutely correct. I'm sure most commercial soups like Broccoli and Cheese, etc, and most cheese based dips and sauces are made from a Velveeta like product. Nachos and cheese are literally chips and melted Velveeta. By itself it's not very useful, but it is a great ingredient for other things. My partner is of an ethnic background that often prides itself on it's macaroni and cheese; making a roux, adding the dairy and various cheeses, etc. for the sauce. She's very discerning about that particular side dish. I grew up on Velveeta mac and cheese. A sauce of sauteed onions, milk, a bit of pepper and Velveeta mixed through pasta. (Breadcrumbs on top and baked a bit, to fancy it up sometimes). There were seldom leftovers. :) I recently made that for her and her eyes lit up at the first bite. She literally squealed with delight after adding a bit of hot sauce. I haven't, yet, had the heart to tell her that it's basically Velveeta over macaroni. LOL.

One minor point of contention: Fudge is supposed to be smooth and creamy, not crumbly and crystalline. If it's crumbly and crystalline the maker didn't heat/cool the fudge well to control sugar crystallization. Good stove-top fudge needs to be beaten til you feel like your arm is going to fall off, and then a bit longer. Now I get this isn't good stove-top fudge.. and it might be perfectly adequate as a last minute novelty.. but I do believe I'll stick with my tried and true recipe :)

Add nuts or dried fruit, I'm a fan of dried cherries. Line an 8x8 pan with saran wrap or wax paper. Pour fudge in pan and smooth out. Wait half an hour and then lift the fudge out of the pan and slice. I've made chocolate, strawberry, white, peanut butter, butterscotch and chocolate mint fudge.

When I was a kid I absolutely adored velveeta. There is nothing like a carefully grilled velveeta sandwich. It also makes the best mac and cheese. When my kids were little I'd add a couple of ounces to their mac and cheese because that's the way I like it. (Cut the milk out completely and add velveeta and a little sour cream and a good amount of pepper.) I eat as healthy as I possibly can now, but I do miss that sometimes. I think when I'm an old woman and get that final diagnosis, I'm going out on a cloud of grilled cheese, peanut butter and jelly, ice cream with hershey's syrup and maraschino cherries, pies, and cinnamon rolls.

  • @AnOldYoungGuy

Hey Emmy...long time viewer, first time commentor. I've been making this recipe for years...nay, decades...after originally finding the recipe inside a box of Velveeta. I've tweaked a couple things over the years that might help in the making of your next batch. First, you DEFINITELY have to cook all the ingredients in a saucepan. When it's just about ready, it'll look all cottage cheesy like yours did, but cook it longer until the chocolate-cheese mixture gets smooth and the butter separates and rises to the top. This is when it's ready. However, this is also when I go ahead and add the teaspoon of vanilla BEFORE adding it to the powdered sugar. I figure adding liquid to liquid makes it all mix better. Next, if you have a powerful hand mixer, I recommend using that instead of mixing it into the sugar by hand. You'll save your hand, and it'll make the batch a lot smoother, taking away that gritty texture. You'll see and taste the difference. Personally, I don't like nuts in the fudge, so I usually leave it plain. However, a couple years ago I added bacon bits, and I really liked it. It's one of those recipes you can pretty much do what you want. Cheers!

Hi, culinary student here! Anything with chocolate is probably best to melt in a double boiler on the stove to avoid the chocolate overheating (overheated chocolate will look thick and lumpy, not smooth and shiny)! With a little patience, the chocolate mixture will definitely still get hot enough this way. Also, cocoa powder would actually work great with a recipe like this! Cocoa powder has a much higher ratio of cocoa solids to cocoa butter than baking chocolate. This means that when mixed into the right recipe it will create a much more powerful chocolate flavor!
