Vegetable Hyderabadi is one of the tastiest accomplishment with the Indian breads. This curry has all the flavors of Andhra Pradesh ( Telangana ) which is basically eaten very spicy. The taste for this dish is mostly from the Green masala with Fresh Coriander, Spinach, Mint Leaves, dry coconut and sesame seeds.

Ingredients:
For roasted vegetables:

1) Butter - 1 tbsp
2) Beans, Carrot, Sweet Corn, Baby Corn, Broccoli (Cauliflower), peas - 2 cups
For ground Masala:
=================
1) Butter - 1 tbsp
2) Oil - 1 tbsp
3) Bay Leaf - 1
3) Star anise - 1
4) Black cardamom - 1
5) Green Cardamom - 2
6) Cloves - 3
9) Ginger & Garlic Paste - 1 tbsp
10) Onions - 1 (medium diced)
10) Coriander Seeds- 1 tbsp
11) Jeera - 1 tbsp
12) Cashew nuts - 6 Pieces
13) Sesame seeds - 1 tbsp
14) Dry coconut powder - 1 tbsp
13) Green chillies - 3
14) Fresh coriander - 1/2 cup
15) Fresh mint leaves - 2 tbsp
16) Spinach(Palak) - 1/2 bunch
For Curry:
=========
1) Oil - 1 tbsp
2) Chilli Powder - 1 tsp
3) Dhaniya powder - 1 tsp
4) Toamto Puree - 1 ( medium)
5) Salt To Taste
6) Cream - 2 tbsp
7) Paneer - 1 tbsp
8) Kasoori Methi - 1 tbsp
Tips n Tricks:
=============
1) Prepared masala paste can be refrigerated and used for 3 to 5 days.
2) Do not over cook the vegetables.
3) You can add any vegetable of your choice.
