Veggie Chunks Pelau || Plantbased One-Pot Meal
Ingredients:
1/2 pack veggie/soya chunks
3 1/2 cups rice
1 can gungo/pegeon peas ( discard liquid)
1 can coconut milk
2 1/2 cups water in total ( 1 1/2 to cook down chunks and the remaining when add the coconut milk)
1/2 medium onion
4 cloves garlic
1 scotch bonnet
1 small carrot
1/4 bell pepper ( I used a red and orange one but any color works)
1 small tomato
3 small bay leaves
Few sprigs thyme
Small thumb ginger ( can use whole or grated)
3 stalks scallion ( chopped one and add to veggie chunks, massage the other two and add later on)
Pimento seeds ( crush or whole)
All purpose seasoning and salt to taste
Roughly 1/4 cup grape seed oil
Roughly 1 tsp browning(if you need a bit more color add a few more drops)
About 4 tbsp ketchup

Try buy it online. They come in a variety of brands. If you don’t see Veggie chunks you’ll most likely see soya chunks.

I make my own blend from dry herbs, salt, onion, garlic, pepper, paprika, etc. You can use any "neutral" all purpose seasoning.

It depends but for the most part I prefer the browning.
