Vegetable Kurma | South Indian Mixed Vegetable Kurma Recipe | Divine Taste With Anushruti

Ingredients:
- 3 cups of fresh vegetables
fresh green peas
chopped carrots
chopped beans
cauliflower florets
peeled and chopped potatoes
- 1 ½ cup of water
- dal chini
- 4 cloves
- seeds of 2 cardomom pods
- ½ tsp of fennel seeds
- ½ tsp of cumin seeds
- 2tsp of coriander seeds
- ½ tsp of turmeric powder
- 1 tsp of red chilli powder
- green chillies
- 1inch of fresh ginger
- 2 tbsp of fresh coriander leaves
- 1 cup of freshly grated coconut
- 2 tsp of poppy seeds
- 20 cashew nuts
- 3-4 chopped tomatoes
- water
- 4 tbsp of Oil
- ½ tsp of yellow asafetida
- 11/2 tsp of salt
Method:
- In a utensil add fresh green peas, chopped carrots , chopped beans, cauliflower florets, peeled and chopped potatoes and water
- Cover it with the lid and cook until the vegetables are done.
- Grind together dal chini, seeds of cardamom pods, fennel seeds, cloves, cumin seeds, coriander seeds, turmeric powder and red chilli powder.
- Blend it to a course powder.
- Also add green chillies, ginger, coriander leaves,freshly grated coconut, poppy seeds, cashew nuts, chopped tomatoes and water.
- Heat a pan and add oil and yellow asafetida then add the freshly ground masala paste.
- Add the vegetables and some water to it and cook well and add salt
- Vegetable Kurma is ready to be served!

I have driven 2 hours to my favorite Indian restaurant just to have this for two years. I found this video not long after discovering the dish, but was always to afraid to attempt making it... Until today.......oh my goodness, I am going to save so much money. This is absolutely wonderful, thank you so much for posting this. Thanks for explaining "dal chini".....I have dried coconut & can't get fresh coconut....do you think it would work?

Technically Dal chini is cassia bark, but cinnamon tastes the same but sweeter

Perfectly a coastal recipe!!! When most recipes use spice powders and grind just the nuts separately, I love the way you used whole spices and tomato etc and ground the masala together. This is the method we follow in Mangalore . We rarely use spice powders, instead we grind the masala with whole spices including red or green chillies. Im gonna make this now :-)
I made this for my vegetarian cousins and it was a huge hit! The technique of grinding everything together was new for me but it came out tasting amazing! The cousins are back so will be making this again in Sha Allah! Thanks a ton for the recipe!! :)

The amazing aroma of this recipie has filled my home,cant wait to eat it now. I m so glad for the NO ONION GARLIC part cos it changes the flavor that we regularly eat. I have added paneer too to tge veggies to give a richie rich feel. Thanks for this recipie. Surely will keep repeating it.
