    3 tbsp sesame oil 2 onions sliced 3 cloves garlic large handful of ginger grated 2 red chillies chopped 10 shiitake mushrooms roughly chopped cook 5 min 150ml orange juice 100ml maple syrup 100ml tamari tamarin paste star anise 2 cinnamon quills 3 litres water (or 2 if you want it more intense flavour) simmer for 10 min strain through sieve and set aside 3 tbsp sesame oil 400g of various mushrooms chopped roughly fry off mushrooms pour broth onto mushrooms pack of brown rice noodles added once noodles cooked, ladle into a bowl then pimp up with fresh ingredients e.g. bean sprouts, mint, black sesame seeds, chilli, pak chow, spring onions. enjoy like the lads! 😁

    Ingredients: • 3 tbsp sesame oil • Two onions • About three cloves of garlic • 15 cm ginger (handful, five times what you would use in a normal recipe) • Red chilis • Ten shiitake mushrooms, roughly chopped • 115 ml orange juice • 100 ml maple syrup (sub with agave nectar) • 100 ml tamari (sub with soy sauce) • Tamarindpaste (sub with molasses) • Anis • Cinnamon • 2-3 l water • 250-300 g brown rice noodles • Bean sprouts • Bok choy • Scallions • Mint • Sesame seeds

    My mom starts screaming when you pour the orange juice haha. I know there're a lot of Vietnamese complaining about how unoriginal the recipe it but as a Vietnamese myself, I kinda like how innovative and creative this recipe is. It's super fun to watch because of your bold ingredients. I'll definitely try this and I think it's a great recipe too. Just don't cook it in front of a Vietnamese or tell them it's pho (like i never cook pasta in front of my Italian friends. I did it once and I thought he was gonna butchered me).

    LOL. Yeah, orange juice and maple syrup don't go in phở. =) Call it bún chay but not phở. Helen's Recipe's phở chay is the real thing. Innovation is welcome but name it right. My kids wouldn't eat bánh bèo with the standard toppings but loved it with pizza sauce.

    Agreed, looks good but it's not phở. I'd recommend Helen's Recipes Phở Chay: kzread.info/dash/bejne/eaCVuKWTpqyTn5s.html . Vietnam is paradise for vegans with tiny vegan shops everywhere. Just look for "Quán ăn chay" or "Quán chay" and you'll find a good meal.

    They made enough for 4 - 6 servings even though they only plated up one but I do see what you're saying. I'd start with about 1/2 what the recipe calls for then see how it tastes. You can always add a little sweetness at the end if you need to. If you are used to dishes with less sweetness, it will probably taste OK.

    I appreciate your recipe and this looks yummy but this isn’t pho. You didnt use the right noodle or roast the spices. There is no bok choy, mint, orange juice, maple syrup... in pho. And the noodles need to be cooked separately. Pho is the most famous Vietnamese traditional food. I understand there are different ways of making a dish but you can’t make any bowl of noodle soup and call it “pho”.

    You guys put your own twist and kart wheel on Pho. I'm normally a traditionalist, but I know the importance of evolution and innovation. It's good because it's yours now.     What they made was a wonderful looking Western style súp chay and I'm glad they did but it's definitely not phở. Western interpretations of other cutures' cuisines should be welcomed but we should still respect the names.     Pho does not have that much ginger in that size pot exclamation point in the giant pot it's made in usually with bones and meat there was a hand of Ginger used but it's 20 something quarts!

    james fancourt I was not rude and of course it's vegan you ass! Now I'm going to be rude because you replied to me twice and haven't been nice once! I never spelled out the world exactly in capital letters nor did I say the word exactly! I simply commented that it might be too much ginger for most people and that a twenty-something court that of pho use that much Ginger. I simply commented that I thought it was a great deal of Ginger and they said it was! You can get off my back now I don't know who the hell you are but unless you manage these guys leave me alone! And I want to know who the hell and which one of you from this channel highlighted a reply back to me again?? Every time I say anything you highlight the reply to me!     swanseawales1979 sesame oil is so strong that it takes over the broth. You don’t need to use oil. If you want vegan pho, there’s a ton of videos you can find on KZread. If you want authentic pho, we do not use oil that’s for sure.

    Ok I'm sorry while I have loved watching The Happy Pear and tried recipes so this isnt to insult your channel I bought this book on a whim in TK max and i was super excited to try this recipe with my bf especially as i missed Pho from when i visited Vietnam. While I understand making vegan substitutes this tasted nothing like Pho and actually didnt taste good at all! Why 100ml of maple syrup just why? I would reccomend you both visit Vietnham and do some research properly before claiming to know how to create a vegan version on an Asian dish. Not a happy customer 2 very upset stomachs 🤬
